17.01.2022 Here's a great Christmas cookie recipe to try! Christmas Spice Cookies INGREDIENTS ... Cup unsalted butter softened Cup packed light brown sugar Cup molasses 1 large egg 3 Cups flour 2 teaspoons ground ginger 1 teaspoon cinnamon teaspoon ground nutmeg teaspoon allspice teaspoon salt 1 teaspoon baking soda 1 teaspoon pure vanilla extract 1 cup white sugar or demera sugar for dusting White chocolate buttons Method 1. Preheat oven to 350C and line two baking trays with baking paper. 2. In a large bowl, mix together flour, ginger, cinnamon, nutmeg, allspice, baking soda and salt. 3. Using another bowl or stand mixer, beat together the brown sugar and butter until light and fluffy. Mix in the molasses, egg and vanilla extract. 4. Add in the dry ingredients gradually until the dough forms. 5. Pour your dusting sugar into a small bowl. Form small balls of cookie dough and roll them in the sugar. 6. Place the cookie dough balls on the prepared baking trays and bake for 8-10 minutes. 7. 05.01.2022 Time to get Festive at the Cottages! Got lots of people coming over the holidays? Try out this little number! Festive Gingerbread Trifle Ingredients... Ginger cake recipe below Gingerbread men approx 7 Tinned pears Custard Cream Ginger flavoured caramel or butterscotch topping (add ginger powder or ginger cordial to taste to caramel topping) Crushed gingernut biscuits Method 1. In a trifle bowl lay thin slices of ginger cake in the bottom. 2. Drizzle third of topping over. 3. Place gingerbread men around inside of bowl looking out. 4. Lay 3 thinly sliced pear halves over. 5. Cover with custard. 6. Sprinkle with crushed gingernut biscuits. 7. Repeat the layers: cake, topping, pears, custard, biscuits. 8. Cover with thinly sliced cake. 9. Cover top with whipped cream pipe stars if desired 10. Drizzle with remaining topping and sprinkle with a few crushed biscuits. 11. Place gingerbread man on top. 12. Store in fridge. To Make Ginger Cake Ingredients 1 cups plain flour 1 cup SR flour 1 teaspoon bicarb soda 2 teaspoons ground ginger teaspoon cinnamon teaspoon mixed spice Pinch salt 1 cup brown sugar 2 eggs 1 cup milk 125 g butter 1 cup golden syrup Method 1. Grease or line with baking paper a large 20cm square tin. 2. Sift flours, baking soda, ginger, cinnamon, spice and salt into bowl. 3. Add sugar, beaten eggs and milk, mix well. 4. Put butter and syrup in small pan and stir over low heat until butter is melted. 5. Add butter mix to flour mixture and combine well. 6.
