Back in 2005, I did not speak French, very stubborn, say yes for everything without knowing, crying a lot, not knowledgeable, so many things.. but only one thing I had, I wanted to learn from the best and stick to his standard. Did not give up until I get it I just had determination of be better pastry chef can make smiles with my pastries. Not looking for good.... I was looking for excellent I will keep leaning and I will always run after you@bajardolivier Do you remember, crazy night for Dali cerebration? We made chocolate showpieces for Salvador Dalí’s memorial until morning before the delivery. So we did our best until last minute! The recipe is so simple *Recipe* 100g of egg white ... 200g of caster sugar Tiny bit of water to make it wet the sugar will not be caramel 1) Cook sugar & water to 118 . 2) When sugar syrup is 110 , start to whisk egg white to very soft peak. 3) Once the sugar syrup reach to 118 , pour to egg white mixture slowly. 4) Keep mixing until body temperature.
