17.01.2022 Feeling a little more overwhelmed than usual? It is normal to feel anxiety and be overwhelmed by what we are hearing on the news. As from 11.59pm tonight, Melburnians will be in stage 4 lockdown and will have a new set of restrictions to follow to help curb the spread of the covid-19 virus. The media is streaming many "takes" on this pandemic and it is easy to get caught up in all the possible avenues that this crisis can take. While it is important to have foresight and... plan for crisis management, it is also important to take a step back, breathe and re-center yourself if you are feeling overwhelmed. Your body knows what's best for you and what you need to heal yourself, to re-set and restore yourself to feel calm and grounded again. Take each day as it comes. Focus on the present moment and look at how your current situation is an opportunity for growth for you. There are negative and positive aspects to all things in life. Choose to focus on the positives as this will allow your brain to look for solutions. It is a habit that needs daily practice. Choosing to focus on the worst in every situation keeps one in a state of stress and worry and "problem-focussed" rather than solutions-oriented. Stress has various effects on the body. Not being able to think clearly is one of them. Know that professional help is out there and you are not in this situation alone. There is always a solution to every problem, it just may not be known to you just yet that's all. 09.01.2022 Weekend Goals ... Meal Prepping. Making my chicken bone broth this weekend. I use the broth as a warm drink, add it to soups, stews and risottos.... Have a read here for more information on benefits of bone broth.https://www.medicalnewstoday.com/articles/323903#sleep I get my chicken carcass' and beef marrow and knuckle bones from my local butchers - Cannings Free Range Butchers who sell ethically sourced grassfed meat. Here's my recipe! BONE BROTH Ingredients: 1kg of Beef Marrow or knuckle bones (ask your butcher to cut to a size that will fit your slow cooker / pot). or 1 chicken carcass 1/4 cup apple cider vinegar (ACV) 1.5-2L filtered water 2 Tbsp Coconut oil 2 Celery stalks 2 Carrots 1 Onion 1 Garlic minced 2 Bay Leaves Pinch of Himalayan Sea Salt Method: Dice all your veggies. Place raw bones in slow cooker or pot, add ACV and water until all bones are covered. Add Bay Leaf and Salt In a small pan, saute in coconut oil onions, carrots, celery, garlic until golden brown then add to slow cooker. Slow simmer for 12-24 hours. Slow speed on slow cooker. Do not leave open flames unattended overnight. Can turn off the heat at night and turn back on in the morning and let simmer all day. Stock can be stored in fridge for up to 7 days or in freezer for up to 6 months. TIP: Fill stock in zip-lock freezer bags and freeze flat on a tray. 02.01.2022 Happy Spring Everyone! I am super excited because this means we are heading for warmer weather! Spring is when nature sprouts forth NEW! ... In Traditional Chinese Medicine (TCM), Spring is associated with creating, growth, cleansing, movement and renewal. In winter, everything tends to slow down and in TCM this is when rest and restoration occurs and the seeds for the next cycle of life are planted. I have learnt to see the silver-lining in every cloud that comes my way and covid-19 has allowed me some down time to create and renew. Create new offerings and renew my sense of self and worth. The beauty about this all is that it is never too late to START AGAIN or to START OVER. It is YOUR story and YOU write your chapters that’s how I see it. Some TIPS to get you started. 01.01.2022 This "light within" looks different for everyone of us ... For me, I have found that spending time in "stillness" and "quietness" helps me thrive. Journalling, essential oil meditations, reading and walks by the ocean are my spark igniters.... Creative cooking, flower arrangement, sewing and creating new crafts for orphan kids sparks my mum up. Being in the garden and working on restoration projects from old cars, machines and woodwork to creating picture frames, hydroponic gardens, ponds and food smokers is my dad's. 01.01.2022 Today is "R U OK?" day ... a day set aside to remind us of the importance of human connection. Besides food and shelter, human connection is vital to thrive. I'm sure most you would have watched the movie "Castaway" where Tom Hanks who was stranded on a deserted island was so desperate for this human "connection", he befriended a wilson sports ball (was it a soccer ball?) ... and named it "Wilson". Although he had found a way to sustain himself with food and water, he was sti...ll longing for someone to talk to and was willing to risk his life attempting to find this connection ... this need for connection is innate in all of us ... we all can benefit from a "Hello" or a "How U Doin'?" ... more so now in our current climate.
