Chocolate Hazelnut Pudding with Hazelnut Sauce Makes 2 small mini-cakes or 1 larger individual cake (cappuccino mug-sized). Ingredients (Cake): 1/4 Cup Milk 1 1/2 tbsp Dark Chocolate, coarsely chopped 25g + 20g Butter 2 tbsp Cocoa Powder 1/4 Cup Self-Raising Flour (or GF Flour) 2 tbsp Ground Hazelnuts or Ground Almonds 1/2 Cup Brown Sugar, firmly packed 1 Egg, lightly beaten 1/3 Cup Water Vanilla Ice Cream (optional, to serve) Ingredients (Chocolate Hazelnut Sauce): 1/4 Cup Cream 1 tbsp Brown Sugar 2 tbsp Dark Chocolate, chopped finely 2 tbsp Nutella Method: 1. Pre-heat oven to 180 degrees Celsius. Grease two 1 cup oven proof dishes or 1 larger oven proof mug or larger ramekin. 2. Stir milk, chocolate, butter and half of the cocoa in a small saucepan over low heat until smooth. 3. Combine flour, hazelnut meal, caster sugar and half the brown sugar in a medium bowl. Add chocolate mixture and egg; stir until combined. Divide mixture among prepared dishes. 4. Stir water, extra butter, remaining brown sugar and remaining cocoa in a small saucepan over low heat until smooth. Pour hot mixture gently and evenly over pudding; bake puddings, uncovered, in a 180 degrees Celsius pre-heated oven for about 25 mins. 5. For the chocolate sauce, combine cream and sugar in a small saucepan. Bring to the boil and remove from heat. Add chocolate and stir until smooth. Add Nutella and stir until smooth. Set aside until ready to serve. 6. When puddings are cooked around the sides, with the centre remaining a little gooey, remove from the oven and stand for 5 mins. Top with Vanilla Ice-cream and sauce

12.01.2022 Live this Sunday at 11am AEST! Ruby’s creation, Mystic Sunday’s cup cake. Join us and bake along and learn the techniques of creative mindful practice through baking. Mystic Sundays Ruby’s own creation cup cakes... Cupcakes 215g plain (all-purpose) flour 150 g caster (superfine) sugar 1 teaspoons baking powder Pinch of fine salt 65 g unsalted butter, softened 1 large eggs 190 ml full-cream (whole) milk 65 ml vegetable oil 1 tablespoon Greek yoghurt 3 teaspoons vanilla extract or vanilla bean paste 3 types of Food gel colouring to your liking. METHOD Cupcakes 1. Preheat a fan-forced oven to 140C or a conventional oven to 160C. Line cupcake tins with the cupcake liners. 2. Add the flour, sugar, baking powder and salt to a large mixing bowl and mix with a hand mixer until well combined. 3. Next, add the softened butter and mix on low speed until the mixture reaches a crumbly, sand-like texture. 4. Add the eggs, milk, oil, yoghurt and vanilla, and mix on low speed until all the dry ingredients are incorporated. Scrape down the side of the bowl and mix for a final 20 seconds. 5. Split the batter into three separate bowls and it’s at this point that you can add any food-gel colourings to the batter. 6. Spoon the different colour of batter into your cupcake tin with cupcake liners until they’re filled about of the way. 7. Bake for 4050 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack before frosting. 8.
