13.01.2022 RED VELVET CAKE THE DIFFERENCE FROM RED VELVET AND CHOCOLATE CAKE: Though both types of cake contain cocoa, chocolate cake is lacking that buttermilk and vinegar combination that is so important to red velvet. The two cakes have a similar cocoa taste, but red velvet is much more fine and rich than chocolate and is commonly made with a Cream cheese icing... HOW DOES IT GET ITS RICH RED COLOUR: Today, red velvet cake gets its coloring from a huge amount of red food coloring dumped in mix, staining the cake a vivid red, but it wasn't always so. Original red velvet cakes got the "velvet" part of their name not because they resembled bright red velvet dresses, but because their texture was so smooth and velvety. Their texture was, in part, influenced by the special ingredients put into the cake. Cake recipes varied, but almost all contained baking soda and either vinegar or buttermilk. Both buttermilk and vinegar are acidic, and anyone who has made a volcano in elementary school knows the copious bubbles that erupt when vinegar (or any acid) is mixed with baking soda. The bubbles fluffed up the cake, making it light and smooth. The vinegar and buttermilk didn't just react with the baking soda. They also reacted with the cake's cocoa. Cocoa powder traditionally has anthocyanins; these are compounds that are also found in foods like red cabbage (which also features in many elementary school science projects). Red cabbage leaves can be used as pH indicators, getting redder in the presence of strong acids. It's the anthocyanins that change color in the cabbage, and they do the same in the cocoa, giving it a red finish.

They’ve been absolute troopers, getting us through the quiet times and the absolutely hectic times of this year, I’m absolutely grateful for the constant hard work and dedication you have provided!!!!! We say a very sad goodbye to Jingyi, as she is moving on with her travels we will miss you so much jingaling!!!!! ... Steffi will be returning with us early next year to get us started up again but in the meantime travels are on the cards. And dear Hannah has Uni once again next year, but hopefully when bored with this, she’ll come visit us again A big Thankyou for all those in between we really couldn’t have done it without every one of you. To all our customers have a Merry Christmas and a Safe and Happy new Year. We will see you all on Tuesday 2nd Feb for reopening!!!!
