24.01.2022 Warabimochi : Warabi-mochi is a jelly-like confection made from Bracken starch and covered in Kinako (roasted soybeans powder). It’s different from normal mochi made which is from glutinous rice. This is another one of my childhood memories during the summertime and often sold from trucks, similar to an ice cream truck in Western countries, or carts. There are many variations of warabi-mochi, with the recipe varying according to local taste. At the moment my favourite fl...avour is Hojicha Warabi-mochi, goes well with Kuro-mitsu ( dark brown sugar syrup) - Learn about Warabi powder : is made by mixing water with starch taken from the roots of warabi harvested in winter, and it takes long time to complete through spring, therefore It is a very rare ingredient. We’re glad that our new online order and delivery with @doodel.au has started well. We hope to continue campaigns regularly and will give you all updates via our social media. Right now however, I need some time to manage through a personal tragedy in the last few days: the passing away of my mother in Japan. It’s bee...n an emotional rollercoaster compounded by the travel restrictions and quarantine. Picture: One of my favourite memories of my mother is of her making fresh Yomogi (mugwort) mochi. 14.01.2022 Homemade Kinako . Did you know what Kinako is made from and how? Kinako is made from soy beans. They are roasted first, then ground beans into powder. By roasting the beans, will bring the rich aroma and flavor.... Also eating Soybeans leave you good benefits as a nutritious food like high in fibre and protein, low in saturated fat, cholesterol and lactose free, a good source of omega-3 fatty acids, a source of antioxidants They are so many soy products : soy milk, soy sauce, tofu, natto, miso,,,, however if you can eat whole beans easily just like Kinako would be great! We use Kinako for our popular Yatsuhashi, however there are more Wagashi which use Kinako. Not many places to find the Japanese Kinako in Melbourne. However you can make it at home! Why don’t we make? - Roasted Soybeans is the great snack and very simple to make. Ingredients: 100g Dry soybeans Plenty of boiled water Method: Set a oven 160 fan 1. Place the dry soybeans into a bowl. Pour plenty of boiling water into the beans. Cover a bowl then leave about an hour. 2. Drain beans using a strainer, then place them onto a oven trays. * make sure the beans are not overlaps. 3. Put them in a oven for 20-25mins. 4. Enjoy the crunchy beans when they cool! . However here is a recipe for you to try this to make at home! In a bowl Kanten-Jelly : Agar Aga Jelly Adzuki Tsukuba-An : Red sweet bean paste Shiratama-Dango Yomogi-Mochi : mugwort * Optional Seasonal fruits : Ice-Cream : your choice Kurt-mitsu: Brown sugar syrup Mini-Nerikiri : * Optional . Recipe ( 2 bowls) Ingredients : Kanten Jelly: 2g Aga Agar powder 1 tbs sugar 200g Water . Shiratama-Dango: 100g Glutinous rice flour 30g White Sugar 110ml Water . Kuri-mitsu: 100g Dark Brown sugar 100ml Water . Adzuki Tsubu-An: 50g Adzuki Beans 500ml Water 40g White Sugar Pinch of salt . - Method: Kanten-Jelly : 1. Place the agar powder and water in a pan to bring a boil. Add sugar and dissolve well and cook 2-3mins. 2. Pour into the mold and let it cool. . Shiratama-Dango: 1. Place the glutinous rice flour and sugar in a bowl to mix well. Add water to combine until as soft as an ear lobe and roll it into bite-sized pieces. 2. Put the rolled balls in boiling water and boil until it floats. When it floats, to cook about 1 minute, then cool in cold water. . Kuri-mitsu: 1. Put brown sugar and water in a pan and heat over medium heat while mixing with a wooden spatula. 2. When the brown sugar melts, turn it to low heat, remove it when it turns out, and boil it until thickens. Remove from heat to cool. . Adzuki Tsubu-An: 1. Place the Adzuki beans and water in a deeper pan. Bring to a boil then cook 20mins. Change water to clean beans. 2. Place back the Adzuki beans in a pan, add plenty of water, cook until soft. 3. Remove water, then add sugar and pinch of salt. Cook with medium heat to mixing with a wooden spatula until remove excess water. 4. Place the paste into a container. To Serve: Cut a Kanten-Jelly into 2cm square pieces, place it on the bowl. Put Shiratama-Dango and Adzuki sweet bean paste, your choice of Ice cream and fruits. Sprinkle the amount of Kuri-mitsu. 02.01.2022 Homemade Akafuku-mochi for just myself Akafuku-mochi is a pounded rice cake confection topped with a smooth red sweet bean paste from Ise region in Mie Japan. You might have seen this type of Mochi at Kiosk when you travel to Chubu regions. This is one of my favorite Wagashi I used to eat a lot!! 01.01.2022 Uguisu-mochi: . Uguisu mochi is a kind of wagashi that really represents Spring. Its the shape of a small bird called Uguisu () (Japanese bush warbler) whose call is very cute and distinctive, and can be heard throughout Japan the start of Spring. This Uguisu mochi has a sweet bean paste centre wrapped in Gyuhi (a kind of mochi), and dusted with blue soybean ()powder. Blue soybean powder is similar to Kinako ( roasted yellow soybeans powder), however the color i...s lighter green with different flavor. I mixed with tea powder to make a brighter green color which looks more like spring. I made this only for photo shoot, not for sell . The purpose of Children’s Day is wish for the happiness and well-being of all children. We normally celebrate with traditional wagashi, Chimaki & Kashiwa-mochi. Chimaki : Uiro style rice cake is wrapped in a bamboo leaf. Kashiwa mochi : is a rice cake filled with sweet red bean paste and wrapped in a oak leaf (kashiwa). You may find difficulties for finding the very high-quality Warabi (bracken) powder in overseas. Even I haven’t found it yet in Melbourne. The reason why is ; pure warabi powder are very limited available due to the long process to make. Most warabi powder are blended with other starch, such like lotus starch, potato starch and more.... You can tell how much warabi powder contain the product through the colour. Pure warabi powder (Hon-warabiko) has dark brown colour, if blended will be lighter brown which is most common you see at Wagashi shop, if there is no brown colour it means no warabi powder in it as you may see at convenience store or local super market in Japan. This recipe is for alternative ingredient use for. However the texture and taste is very similar that you may enjoy! You can find alternative powder at any super market.
