25.01.2022 Meat packing today. One of the steers was a White Galloway and he came up very well. We have lots of delicious, well marbled meat for the Crfm Markets on Saturday. Come early for best choice

24.01.2022 Well, that was different. Picked up a young steer for a friend and took it to the sale yard. He managed to get his head through a small gap in their old race. Thought he was really stuck but a bit of pushing got him out. We also promised to vaccinate the mums but they thought they were too fat to fit up the skinny race. Greg managed to vaccinate them loose

22.01.2022 We have corned silverside this week at #crfm. Put in cold water with brown sugar, bay leaves, balsamic vinegar and cloves. Bring to boil, then lower to simmer. Cook for about 3 hours. Add potato, carrot and whole onions. Cook for another 1/2 hour, add a green vegetable. Dinner from one pot. Make a white sauce ( butter, flour and milk, ) add either hot English mustard or parsley. If there are left overs, wonderful for toasted sandwiches wit cheddar cheese

21.01.2022 Managed to move all our cows and calves from an ajistment property today. Thanks Al and Hamish, we didn’t expect to achieve so much. The newly renovated cattle yards are having their first test; working well

15.01.2022 How to sort cows when the yards are muddy; graze on the roadside, pick the cows that have been sold and move them up the roadway, away from the herd. We will need to put NLIS tags in them and vaccinate again, but at least it’s only 4 and not the whole herd. Thanks Liz & Ken for moving them up the road for us

14.01.2022 It was a Galloway beef sort of day. For lunch we had homemade Galloway beef pies ( thanks Al) and homemade sausage rolls. Dinner was Rogan Josh, made with Galloway hanger steak. Usually, we sell hanger steak to be grilled, but it casseroles wonderfully. This was just ‘melt-in-the mouth’

11.01.2022 Nice uneventful trip down the Clyde Mountain ( the best kind) to deliver some belties to Emma and Rob, who sadly lost some of their belties in the fires. Thanks for lunch, nice to catch up and wonderful to see the regeneration of burned areas.

08.01.2022 Minto Galloway’s has 3 hides back from the tannery. Very hard to get hides back from abattoir, we took steers to an abattoir in Wangaratta which did allow us to pick up up skins the next day. Drove them from Wangaratta to Ballarat, so not something we can do often. The two dun hides are $1000 each, the riggit is $1200. We will have them at the #crfm on Saturday. Let me know if you are interested. We do have a waiting list for Dun hides

08.01.2022 Listened to advice from several customers and made soup from the stock resulting from simmering our corned silverside. Was delicious, so I will no longer discard the corned beef stock. For the customer who asked how to cook corned silverside, my recipe is; put the corned beef straight from packaging into cold water ( no need to wash meat), add cloves, peppercorns, balsamic vinegar and brown sugar ( or golden syrup or honey), bring to boil, then reduce heat for a very low simmer. Cook for 3 to 4 hours, add potatoes, carrots and onion and cook for another half hour, then add a green vegetable. I always make a mustard sauce; white sauce ( flour, butter, milk) with hot English mustard to taste and brown sugar. Dinner from only two pots . If any left overs, make toasted cheese sandwiches

05.01.2022 Market tomorrow. The steers are doing remarkably well after rain bought the grass back. We will also have offal; tongue, ox tail, kidney, liver and heart

04.01.2022 From this; mud, mud and more mud, to this. Thank you so much to Liz and Ken who masterminded the project, ordered the equipment and supplies needed and master managed the work. Thanks to all the helpers, particularly Liam, who worked like a Trojan. So wonderful to have such functional yards again.
