01.01.2022 ZUCCHINI FRITTERS These fritters were so delicious. They are perfect for breakfast, lunch or dinner. For breaky I would serve them with a poached egg and some bacon and they’re perfect cold in a lunchbox with a little side salad. Ingredients:... 1 zucchini 1 carrot 1/2 a red onion 1/3 cup of corn kernels approx 1/3 to 1/2 cup of rice flour 1/2 cup of milk salt and pepper (to your liking) 1 tsp ground cumin 1 tsp ground coriander 1 tsp chilli powder 2 eggs olive oil 1 tsp baking soda Method: 1. Chop zucchini, carrot and onion in TM bowl. 2. Scrape down the sides of bowl and add all other ingredients and mix until combined. If mixture looks a bit thick add more milk. 3. Put some olive in a pan over medium heat and spoon approx. 1/3 cup of the mixture and spread out with the bottom of the cup (watch my reel to clarify). 4. Cook for 2-3 minutes and flip. 5. Serve and enjoy.
