03.01.2022 Mr. Fish before his date with the hot oven. 1 large fresh whole snapper 1 giant (or 2 normal) lemons good handful of chopped fresh herbs... As much garlic as you want, I used 4 large cloves. 1 cup diced tomoto 1 cup of olives (optional) 4 Tbsp of balsamic vinegar 1/4 cup coconut oil, melted Juice of lemon(s) Rind of lemon(s) 1 tsp Rock salt 1/2 tsp Fresh cracked pepper 1. Preheat oven to 200 degrees and start with a clean prepared fish. Score fillets roughly 2cm apart. Set aside. 2. In a mixing bowl combine all ingredients and smother the bottom of deep oven dish with 1/3 - 1/2 of the mix. Place fish on top (you can now also stuff the fish with more lemon, garlic and some of the mix if desired.) 3. Smother the top of the fish with the remainder of the mix, the cover dish with tin foil and poke steam holes. 4. Bake for 20 -30 minutes until perfect.
