16.01.2022 [English follows] 2019 Miss SAKE 316 Miss SAKE ... 1893(26) 24 300 Japanese cafe and gallery Miss Miss 2019 Miss SAKE [for English speakers] Hello, everyone. I am 2019 Miss SAKE Sae Haruta. On March 16th, I participated in a Sake brewery tour and a tea ceremony experience with Miss SAKE from Australia, Hong Kong, Taiwan and Vietnam. Sasaki Shuzo brewery tour Sasaki Shuzo was founded in 1893. There are many Sake makers in Fushimi, outside the capital, however, this brewery is the only one brewery which is located inside the capital. This brewery used to be south area of the house of Hideyoshi Toyotomi called Jurakudai. One of the reasons he built his house here was great water. He used to hold a big tea ceremony called Kitano oochanoyu. Also, he made a space in his house for Sen no rikyu who is a famous tea master and enjoy tea with him. He loved tea. From these information, it can be understood that the area around here has long been a well-watered area. Sasaki Shuzo uses selected rice to make Sake with such high-quality water. They use the rice made in Toyama, not in Kyoto. Sake makers are usually located around rice-producing region, however, in Kyoto, you can hardly harvest much rice. Wine brewers own their own vineyards and grow wines, but for sake making, sake brewing and rice farmers are separated. So they look for good rice of the year from outside Kyoto. Mr. Sasaki Shuzo has handed down their spirit of sake making to the present day. I have spent valuable time to realize the tradition and history which are parts of the greatnesses of Japanese Sake culture. I will make great efforts to spread the feelings and spirits of breweries which differ one by one. Thank you very much for letting me join this wonderful opportunity. Tea ceremony experience by Randy Channell Soei Sensei Randy Channell Soei Sensei is a Canadian professor of Urasenke, and the reason for visiting Japan was to learn martial arts. While teaching English in Matsumoto City, Nagano, he attended a dojo such as Kendo or Kyudo and so on. Then, he met a tea teacher next to his house. It is a an encounter with the tea ceremony for him. Miss SAKEs from overseas and I had the experience of putting some tea on while being guided by Randy Channell Soei Sensei. It was the first time I had experience, and the manners were very difficult, and the taste of the green tea I made was very bitter. Randy Channell Soei Sensei said that the most attractive feature of tea ceremony is that it can interact with various people, one time in a while. The basic of tea is the hospitality, and it is contained that the heart that entertains the other parties and the mind that thinks of people in a cup of tea. After I made a cup of tea, Mr. Randy Channell Soei Sensei made a cup of tea for me. The tea that Randy Channell Soei Sensei, who is filled with such heartwarming thoughts, gave me no bitterness at all, and it had an exceptional deep taste. Miss SAKEs from overseas also had a very relaxing and meaningful time, touching Japanese culture and Japanese spirit. I would like to express my sincere appreciation for the opportunity to be able to realize the attractiveness again while sharing the wonderfulness of Japanese culture with foreigners through the activities of Miss SAKE. 07.01.2022 Introducing 2019 Miss Sake Australia. Congratulations to Stephanie Coombes. Stephanie has travelled Japan extensively, often documenting her travels for media publication. Her love of sake grew from her dinning experiences in Japan and she is eager to share this love with others.... In Australia she is a regular in the media landscape. Stephanie has worked extensively for online publications, print and radio, including presenting for the prestigious ABC and creating documentaries for Radio National. However she describes herself happiest when writing about her extensive travels through Japan and has had several articles published on the subject. Last year she took a break from her fast-paced media lifestyle to dedicate herself to learning Japanese at RMIT University so that she could better understand the countrys rich culture. Whilst describing herself as a beginner, Stephanie did win the open division of the Victorian Japanese Speech competition. Stephanie has been travelling to Japan once a year to enjoy the food, sake and culture. But even when home in Australia participates in cross-community events where possible. We believe Stephanies passion for sake and Japan is infectious and her skills will certainly help build the profile of sake in Australia. I am 2019 Miss SAKE Sae Haruta. On March 17th, I went to Gekkeikan Sake brewery tour with four Miss SAKEs from overseas. Gekkeikan was founded in 1637 by Jiemon Okura in Fushimi and it is one of the worlds oldest companies. Gekkeikan made a great progress in the age of the 11th generation owner Okura Tsuneyoshi. He said, Sake making is made up of science, and introduced science and technology to sake making in 1909 (Meiji 42). In 1910, Gekkeikan invented a small bottle with a cup. It is a product of an innovative design that is equipped with a cup so that you can enjoy sake even when traveling for a long time on a railway, etc., and also has a table with a swinging opening so that the contents do not spill even if the train shakes. It gained popularity due to its ease of drinking and portability, and it became an opportunity for the laurel crown to become widely known as the railway network spreads. In addition, under the motto Quality First, Gekkeikan brewed high-quality sake in 1961 (Showa 36), utilizing the four seasons brewing system to make sake throughout the year and the latest technology. It could be said that the four seasons brewing system that allows sake brewing regardless of changes in the climate is an innovative one that enabled sake brewing in different environments from Japan such as overseas. Gekkeikan which created the systems that allow the people all over the world to enjoy the same quality Sakes as Japanese Sakes has revolutionized the brewery industry. Gekkeikan, which has revolutionized the brewery industry at the aspect of technology, also brought a major impact about the taste of their Sakes on the brewery industry, such as having been awarded a gold medal many times in the past at the National New Wine Dictionary. After the tour of the sake brewery, I drank four different Sakes including Gekkeikan Tokusen which won a gold medal in the SAKE category of the International Wine Challenge (IWC) 2018 and Great Value Award. There were very delicious. I could spend informative time and be stimulated a lot by seeing the sake brewing process directly and leaning the process of Gekkeikan that has made a lot of history in the sake brewing industry.
