15.01.2022 Part 2 of our agroforestry project Farm tours We will have a relatively brief and casual tour of the patch, with an intro spiel, a walk through, Q&A, and each tour look at one aspect in a little more detail. This time we’ll be examining how and why we plant biomass We are requesting donations to our Autumn tree planting fund in return (suggested $20 to buy 7 trees), and will also have eggs and freshly harvested veg from the patch for sale. ... Being a Friday afternoon we will be booking a table at the Eltham Pub ( @elthamhotelnsw ), only 5km up the road, to see off the week in style. 12.01.2022 Agroforestry raised chicken. The chickens are enjoying the shade and improved foraging opportunities in these multi strata (plants of all different heights) tree rows, while all the species are benefiting from the disturbance and biology from the chickens (except the pineapples which get sat on). This particular row is destined to be a blueberry row, which are growing slowly while the eucalyptus, banana and more fulfil their role as early succession species.... #agroforestry #syntropicfarming #mistycreekagroforestry @ Mullumbimby Farmers Market

Not your average chicken, this mighty bird is forest raised by the amazing @mistycreek.agroforestry in Booyong. ... Finished on the coals and served with Jerusalem artichokes and potato mash, Warrigal greens and ‘beurre de montpellier’. Their livers are transformed into chicken liver parfait. Necks, wings and hearts are potted and stuffed in a roasted onion on this dish. The legs are deboned, stuffed with chicken mousse and mushrooms, rolled in crepinette and cooked at low temperature. The feet? Well we are planning on something for them too!

05.01.2022 We are happy to announce our next farm tour on Saturday 29th of May. The agroforestry is looking very lush after a wet summer and receiving a boost from our chickens. We will have a roughly 60 minute paddock walk with a Q&A afterwards. We will delve into our regenerative forest gardening system, with paradigm-challenging discussions covering topics such as ecological accounting, using weeds instead of buying fertiliser, growing things only to chop them down, the importance of... integration and many more. Tickets can be purchased on our website or with us at the Mullumbimby farmers markets for $20pp + GST. We hope we can provide some inspiration to others to spread the regenerative movement

02.01.2022 #Repost @loveyaguts_box Always making our chooks look good These guys can’t always make the Mullum markets so they pick up our chooks from @herbalwisdombangalow ... We have a roast chicken once a week. It is the ultimate dinner and very easy to pop in the oven and let it roast away. A dinner like this goes beyond just one meal. We use this for leftovers the next day, for little Williams lunch for a few days and freeze the bones and carcass to make a chicken stock or broth. This is why I spend a bit extra on sourcing the best quality chicken I can find. If you have access to pasture raised, hormone free chicken I guarantee it is worth the extra money. You don't need as much on your plate and you know you are getting the very best quality. Some of the difference I notice from a commercially raised chicken to this pasture raised one. - It is bigger! So much more juicy meat comes from this one chicken then a commercially raised bird - the bones don't break. Do you notice how easy standard chicken boned break after you have cooked it. The bones of this pastured chicken as so strong and full of collagen and all the goodness for our gut. - The meat just doesn't dry out! I swear you could cook this for a little longer than what you are meant to and the meat is still SO juicy. - I am not bias, it 100% taste like chicken should. There is no slimy or artificial taste to it. If you don't know what I mean you just need to try it and then you will understand. Swipe across for ingredients METHED 1. preheat oven to 180 degrees. 2. chop up the butter and slide it between the breast and the skin. All over the top 3. Give the chicken a good coat in olive oil, salt and pepper and add whatever other herbs on top 4. Place it on some onion and fill the pan with some water or stock. Just so the chicken is just sitting in it. 5. Pop in the oven and cook for roughly 90 mins, until skin is crispy. * you can stick half a lemon or apple in the cavity for extra goodness.
