24.01.2022 Such a productive morning with my Thermo!! Chocolate chip cookies. Sausage Rolls.... Banana, Date and Walnut Bread. Cheesy Vegetable Muffins. Creamy Tomato and Salami Fettuccine. All in a few hours work! So glad I got it done this morning, as Jax hasn’t been too well this evening pays off to be prepared and having two bowls made it that much easier #thermomixaus #TM6

19.01.2022 All-in-one Chicken dinner. This was a deceivingly delicious meal and I love that it used almost every part of the thermomix! While the sweet potato was steaming in the simmering basket, the chicken was cooking in the varoma dish and the other veggies in the varoma tray. A simple and tasty meal ready in under 30 mins. 14.01.2022 Chocolate Hazelnut Spread. This is a great take on Nutella - but better if you ask me! This was so easy to make and I love knowing exactly what’s gone into it. There’s no hidden nasties like Nutella.... No Palm Oil- which is high in saturated fats and the production is responsible for deforestation No artificial additives or emulsifiers- which cause behavioral issues and poor gut health No vanillin (flavouring) Vanillin is an artificial alternative to vanilla extract and can trigger allergic reactions. 09.01.2022 Lalas Creamy Lemon Chicken This dish is a real treat on the taste buds! A little bit of preparation, but it is so worth it! You can serve it with whatever you like; I like to serve ours with rice. So before it goes in the oven I add 1 cup of Arborio rice and 1 cup of water to a casserole dish, place the chicken on top, pour over the sauce and then bake for 30 minutes.... This is what I have been working on for the past few days, feeding my starter culture (thank you to a fellow consultant Jemma for getting me started), and today I was able to use it and make my first loaf! Not quite what I was expecting (appearance) but it sure does taste good! ... I found the GF sugar cookie recipe on the internet (non thermo) but I converted it, so it was made in the thermo and the fondant recipe comes from Cookidoo. Before I owned my thermo I would never have attempted to make my own fondant and only used packet stuff. But now I can confidently make it myself and for so much less $$ plus I’m happy to know exactly what’s going into it ... Tested out my new blade cover and the slow cook function, and they did not disappoint! 3 hours of slow cooking = Tender meatballs and a really delicious sauce, served with spaghetti and cheesy garlic sourdough ... 03.01.2022 Lasagna This was so so good! I changed the recipe a bit by doubling the quantity of vegetables; using carrot, zucchini, mushrooms, onion and garlic. I also added veggie stock, tomato paste and a bit of water. For the bechamel sauce I used almond milk, which was really nice too. ... 01.01.2022 Quiche Lorraine. I was so tempted to get takeaway tonight because I just didn’t feel like cooking. But this was so simple and fast to whip up that I opted against takeaway, and I’m so glad I did! Such a delicious and relatively cheap dish, that I feel is so underestimated. So one for tonight’s dinner and one for the freezer, for another night when I need something quick and easy ... 01.01.2022 On Friday my first baby turned 3 I was struggling for inspiration on what cake to make him, so instead of cake; I made some chocolate cupcakes with buttercream frosting and arranged them in the shape of a 3. Simple, delicious and he absolutely loved them (and so did we!) ... I used both the chocolate cupcake and buttercream recipes from Cookidoo.
