23.01.2022 I certainly have been MIA lately - we have been away on a little holiday and so no thermomix to play with. A big welcome to new followers since I was last in touch. Over the holiday break I used the time to 'surf' (so to speak!) on Gluten Free Baking Bloggers. When a recipe starts with "One Bowl" you have me at 'One'! So on my return I knew that this recipe was going to be first in line to make. It did not disappoint and was easy to convert - I creamed the sugar and cubed butter for 30 sec/sp5 and added the flours, baking powder, xanthan gum, cocoa powder, eggs and milk and mixed for 20sec/sp5, scraped down the bowl and mixed again for 10 sec/sp5 and then mixed in the chocolate chips carefully with the spatula. I just made the icing as per the recipe. Enjoy!

21.01.2022 We are heading off tomorrow for a weeks holiday so no thermomix cooking for me over the next week - hopefully BBQ's and salads on holidays which require very little work. Thought I would share this savoury muffin with you, which will be very handy for big and little people's lunchboxes, and very quick to whip up - just sub the flour for your favourite gluten free flour. Hope you give these a try - I might even make a batch in the morning before we leave (Hmm! I could be dreaming here!!) 18.01.2022 I had a rather forlorn looking zucchini in the fridge not quite enough to make the zucchini slice on cookidoo so I added a carrot to make up the weight. I was waiting for something else to cook in the thermomix so prepared a bit before hand by grating the cheese manually and cutting the bacon manually (not necessary but filled in time. I made a 'shortcut version' - so chopped the onion 3 sec Sp7 and then moved on to throwing all the other ingredients in the bowl (I subbed the... rice flour for 140gm GF SR flour) and then just mixed everything as per recipe on cookidoo - for 6 seconds on reverse sp4 and scraped down and mixed again for a few seconds. I do find that the slice does need to be cooked longer than 30 mins - in fact I had mine in the oven for an hour and then cooled it in the oven. 18.01.2022 An easy chocolate cake for a birthday girl was needed today - this EDC Easy Gluten Free Chocolate Cake (EDC - stands for Every Day Cookbook that came with the TM31 many years ago) took no time at all to whip up. Sometimes some adjustments need to be made for GF baking - not just a straight swap - and it was great to find a recipe that already had the work done for me. I had some of Sophia's Kitchen flour blend to use up (I think I should have added some xanthan gum to it as the cake was a bit crumbly) or you could even use a bought blend which often has some xanthan gum added to the flour blend. 16.01.2022 Growing up in the UK and Northern Ireland one always had something to eat 'with a wee cup o' tea in the hand' as they say in Ireland! Now sometimes that can get a bit out of control with a great slab of chocolate cake I might add. However, these Healthy Cacao bliss balls will help keep things under control and give you that chocolate fix! I put my own twist on this recipe and used Sunflower seeds instead of Pepita Seeds, and 40gm sultanas and 20gm dried apricots instead of al...l sultanas, added in 4 strips of orange rind for a jaffa flavour (which went well with the hazelnuts) and left out the coconut oil and chia seeds. 13.01.2022 Friday is here and the weekend is truly on its way! Looking for a Chinese 'Fakeaway' recipe - I would really recommend this recipe on Cookidoo - it is amazing - but let me tell you a few tricks - don't use aluminium foil to line the trays as suggested - the chicken sticks to it(even if oiled) - use baking paper. I started at Step 4 - but instead of putting the coating ingredients in a bowl I added the egg to the thermomix bowl and whizzed it up for a few seconds and then add...ed all the other ingredients and whizzed again for a few seconds and then added the chicken to the bowl and whizzed on reverse for 3 seconds to coat the chicken and then onto the trays (no extra bowl to wash up then). While the chicken was cooking I went back to step 1 - once cooked I put the rice and vegetables (use what you have) in thermoserver to keep warm. Then moved on to step 5-7 adding the chicken into thermomix bowl to mix the sauce over the chicken at the end. It is absolutely delicious. 09.01.2022 I found some medjool dates at the back of my fridge this morning - can't remember buying them so they must have been there a while. A search on Cookidoo led me to this delicious muffin recipe. This would have to be the quickest ever muffin recipe - you just throw everything in the bowl and mix 10 sec/sp5, scrape down the bowl and repeat the mixing again, and then into your muffin tin - what could be quicker than that. I added my own twist by throwing in about 30gm cacao nibs - just stirred them in with the spatula. All was done in about 25 minutes. 07.01.2022 Georgina shared this cake recently - not having a mixer or hand beater I converted it quite quickly to Thermomix. I sieved the flours and baking powder first for 20 seconds on Sp4 and then set that aside. I milled the lemon peelings and castor sugar for 10 secs sp 10 and scraped down the bowl and repeated for another few seconds. Then placed in the butterfly and added the butter and creamed together for 2 mins on sp3.5. Remove the butterfly and add the eggs in one at a time with the blades going at sp3 and then add in the vanilla and mix for 30 secs sp3. Add reserved flours and baking powder and salt and mix 15 secs sp 4 scrape down and repeat for 10 secs sp4 and then stir in milk by hand with spatula to lighten the batter. I did find I needed to cook mine for about an hour. It really is the perfect cake to go with a cup of tea.
04.01.2022 I decided to hop on the 'Meatless Monday' bandwagon today and gave the Pesto Spaghetti with roast pumpkin on Cookidoo from the Sam Wood Collection a try. It had a 4.8 rating so hopefully I was on the right track - and indeed I was. The only tweak for Gluten Free was to use GF spaghetti - I cooked it on the stove as I am not a fan of GF pasta in the thermomix. Next time I would cut down on the amount of garlic but other than that, no further changes.
