20.01.2022 PORRIDGE - it's porridge weather! Porridge is a wonderful Thermomix dish - quick, easy, hands-free, economical, versatile, nourishing! I love porridge and the TM caravan porridge this morning hit the spot.... I pimped mine up with what I had on hand - strawberry coulis & sour cream! Alby had his plain. JA could partake as it's not coeliac-friendly. See more
15.01.2022 Shark Bay Scallop Tostadas Do you like scallops? These are delicious! Seared scallop, Avocado Cream, Lime. This is an appetiser Julie-Anne and I both chose at a recent birthday lunch at Matilda Bay Restaurant. These were so delicious I'm determined to create my own version. The Thermomix is perfect for making the tortilla dough, then squash them with a tortillla press (or saucepan!)and fry to make tortillas. Then cut circles and fry/bake them to make mini tostadas.... Avocado cream is a cinch to make in the TM, and there are several recipes on cookidoo. I'd tweak the red cabbage garnish (a bit less and finer cut, and possibly a fine slice of chilli!) So this is a recipe project for me to work on! I can feel a cooking class menu evolving. Let me know if you're keen! See more
12.01.2022 Here is exciting news about an upcoming software update for the TM6. I love that the TM6 really is smart-connected using home wifi or phone hot spot for software updates. This means the TM6 is always getting better! The coming updates include improved layout for the Pre-Clean & Egg Boiler modes. I love both of these modes and use them regularly.
12.01.2022 Thermomix Dinner Rolls Dinner rolls are easy and fun to make using your Thermomix. The photo below shows the delicious part whole meal rolls made at a recent cooking experience. The Cookidoo recipe is Basic Bread Rolls (the same recipe for Basic Bread in your TM Everyday or Basic Cook Book).... We followed the recipe exactly except milled the wheat grains twice to get a finer result. 100 g of beautiful high protein Esperance wheat were milled in the TM6 and incorporated with 400 g of bakers flour. This gives dough with a delicious flavour and good rising ability. In this recipe there is a 30 minute proofing step, then the dough is shaped as desired and put into a cold oven. This gives a extra time for the rols to do a second rise before the heat of the oven bakes them to a golden deliciousness! It also shows how quick it is to make bread rolls from scratch. 07.01.2022 Lamb & Corn Fritters (GF) We're doing it tough in the caravan! I had some left-over roast lamb in the fridge and searched Cookidoo for fritter recipes. I couldn't find any lamb fritter recipes - but the Salami, Corn & Pea Fritters (Hip, hip, hooray collection) looked like a good template recipe. Recipe total time is 40 minutes, so it's a pretty useful mid week recipe. I used GF plain flour. I didn't use spring onions, salami or peas. Instead I used 200g diced cooked lamb, 50 ...g chopped snow peas and 160 g fresh corn (1 cob). I didn't have yoghurt so substituted light sour cream. Fresh thyme instead of dried herbs. Delicious. And there are leftovers! The recipe made 10 good sized fritters.
05.01.2022 Harlequin Custard Here is a photo from last night's Cooking Experience. Harlequin Custard is a twist on a classic comfort food. Vanilla custard with some chocolate custard on top. You have to be a bit careful with the plating up, otherwise it can look crazy messy!... This is a TM6 Thicken mode recipe. Custard is Thermomix magic! Have you made custard lately?

03.01.2022 Honey Sesame Snaps - Choc coated or not? The verdict from multiple taste testers, was choc coated is best! As a result of my recent Facebook Live showing off this recipe, I had multiple batches of produce. A golden opportunity to try some coated in chocolate.... I used Cadbury 70% Cocoa Dark Cooking Chocolate and was very happy with the result. I used the microwave in 10 second bursts to melt chocolate in a small ceramic bowl. It's better to heat progressively, using residual heat and stirring to complete the melting process, or; Thermomix choc melting and tempering method (courtesy of Gail Linton): Chop it first and then 50 degrees until it is melted. A lot less messing around and fuss! I'd better give it a go myself! In theory, coating the Honey Sesame Snaps in chocolate will prevent them getting sticky from humidity in the air, so they'll last longer. In reality, it stoped them from getting sticky, but they didn't last longer! If you have a TM6, I encourage you to give this recipe a go. I shared lots of tips in my video below, which will help make this easy.
01.01.2022 Meet Thermo-Miranda! Space can be at a premium in a caravan, so being creative fitting things in is part of the challenge and fun. We had guests for lunch today and weren't completely sure if we'd be dining in the caravan or the annex. Clearing the inside table, the fruit bowl looked perfect on top of the TM6! Reminiscent of the signature fruit hat outfits worn by 1930's Portuguese-Brazilian singer, dancer & actress Carmen Miranda.... The weather was mild and sunny, so we ended up dining in the annex with a feast of crayfish and salad. The Thermomix did get involved earlier, making the Elderflower and Lemon Dressing! Message me if you'd like the recipe. On Saturday I visited diving friends, Jon, Jack & Tom and my timing was perfect - they'd had productive dives off Rotto and I came away with crayfish! We enjoyed a WA Day lunch with great company and great food.
