23.01.2022 30 second whole orange cake When you need to bring a dessert but are running out of time. 30 seconds is all you need. The real cake looks exactly like the picture but once again I was attacked by tiny humans for a piece before I could take the photo last picture is a whole orange blitzed with butter. 8 seconds, that’s all it took! This is not a cookidoo recipe but it’s easy to follow the 2 instructions and 4 ingredients to make it. I poured it into the cake tin and cooked it at our destination so it was nice and warm after lunch.
23.01.2022 Mediterranean seafood with tomato and fennel. OMG this dish is so yummy. One of my favourite vegetables cooked or raw is fennel and is doesn’t let me down in this dish. Served with mash, zoodles or some fresh crusty bread to soak up the tomato juices
23.01.2022 Moroccan prawns with cous cous- I didn’t want to eat cous cous so I was going to use cauliflower rice- then my half cauliflower went missing- so I used broccoli rice I can’t think where for the life of me my cauliflower went anywho, this was very yummy. I find the Moroccan flavours mild, I would never pick Moroccan when eating out as I find it overpowering. This dish was perfect and very filling with chickpeas and yummy green olives.

21.01.2022 Slow cooked ribs in Smokey paprika barbecue sauce Well it can officially fit 1.2kg of pork ribs! Firstly, I made the Smokey barbecue sauce then poured it over the ribs to cook slowly for over 2 hours. The result, Smokey yummy ribs. Buon appetit

19.01.2022 Rainbow bowl Ain’t that the truth! When your dinner has this many colours in it you know it’s good for you. So what’s in it: - steamed brown rice which was cooked in a stack with beetroot and sweet potato (35 minutes this is also when I cooked the chicken) - cauliflower, carrot and capsicum salad with apple cider vinegar (3 mins)... - steamed chicken marinated in turmeric, lemon zest and juice and garlic (45 minutes includes making marinade, marinating and cooking. It was cooked together with the veggies above) - spiralised cucumber and to top it off.... goats cheese sauce with Greek yoghurt and thyme. (3 mins) The components could be made ahead of time and cooked and eaten as a cold salad.

18.01.2022 Hunters lemon chicken rissoles with mash potato. Well, if that isn’t the smoothest mash you’ve ever seen? The rissoles are so tasty and I love that I minced the chicken and mixed it together. This is easily a dish you could make ahead and freeze and cook when needed. #lifeiseasywithathermomix
17.01.2022 The good ol’ spaghetti bolognaise served 2 ways. With so much variety in Cookidoo, this dish doesn’t come up too often in our repetour but it was missed by all.
17.01.2022 Leek and cheddar pudding So when I die and move onto the next place (where I can eat what I want and not put on weight ) I dare say this would be your welcome meal garlic, cheese, bread, spinach (cos it’s healthy!). Let’s hope this arctic freeze will end soon otherwise I could wind up on the other side sooner rather than later This dish would be awesome to bring to a BBQ, dinner party or a great dinner to feed the family when you’ve realised there’s no chance at the #motheroftheyear award P.S it was so yummy

16.01.2022 Beef stew with dumplings There was a last minute meal change tonight as we just didn’t feel like shanks tonight. This meal was full of flavour with the addition of some yummy dumplings to soak up the sauce. The only think I’ll add is the meat needed to cook at a lower temp for longer, more slow cooker style but it’s flavour was amazing!!

15.01.2022 Orange sesame chicken with broccoli and noodles I love it when an Asian dish tastes awesome from the thermo! The sauce in this dish is probably one of my favourites. Main ingredients include almond butter, orange zest, dates, ginger and tamari. I used udon noodles not soba as the recipe asked and zoodles for the adults

12.01.2022 When pizza is on the menu...all the time. We got a bit risky, chorizo, onion, capsicum makes for a yummy pizza PLUS Creamy Scallop Soup with Chorizo. The scallops were steamed to perfection and were sweet with a yummy thick potato soup with sautéed chorizo. I couldn’t make this stuff up on my own- thanks cookidoo!

04.01.2022 Dairy free caramel coconut ice cream So the challenge was to find an ice cream that tasted indulgent without the things we did t want i.e. dairy and sugar. So I found this beauty. It’s actually in a recipe to accompany crepes- double yum! It is made of coconut cream, oat milk, coconut sugar, eggs and a couple of smaller ingredients. I also added our pea protein vanilla powder as I was asked to make it a protein ice cream!! This is a win on so many levels a) I fooled the kids and they love it, b) it tastes freakin amazing and it’s tricked my tastebuds, c) I don’t have the ‘dessert guilt’.
