10.01.2022 UPDATE WITH RECIPE BELOW. Ok, I admit it, I had to ring my nearly 90 year old mum for this recipe. This was one of our family's regular desserts growing up. ... JAM ROLY POLY Mum makes hers as a self saucing pudding, which is really delicious. Traditionally, mum would make two to feed the 8 of us. One with apricot jam and sprinkled with coconut and sometimes one with stewed apples and Cinnamon. I combined the two and used Fig Jam, apple and a little Cinnamon. Luckily, we had dinner at our friends house, so I could share it all and didn't HAVE to eat it all myself. Of course, Thermie made some yummy custard to go with it. Who wants the recipe ? RECIPE Mum actually used the boxed pastry mix for her Roly Poly but I made mine following the basic Shortcrust pastry recipe in the Basic Thermomix Cookbook but doubled the recipe. This fed 10 people, so you may only want to do half. You could use the sweetened version but I think its sweet enough and mum never used sugar in hers. INGREDIENTS 300 g plain flour, plus extra for dusting 150 g unsalted butter, chilled and cut into pieces -3/4 tsp salt 100 g chilled water Approx 250 gms apricot jam ( or any flavour you like) 50 gms dessicated coconut 500 gms of boiling water 100gms of brown sugar 75 gms butter TO MAKE THE DOUGH Place flour, butter, salt and water into mixing bowl and mix 20 sec/speed 4. Transfer pastry onto lightly floured silicone bread mat or work surface and shape into a flattened ball. sprinkle dough mat or work surface with flour and roll dough out into large rectangle ( approx 30 cm long). Spread jam over dough, leaving a gap around the edges. Sprinkle with coconut and roll up, press sides and ends together, and place in greased casserole dish. To make the syrup, mix water, butter and sugar, until sugar and butter have melted. Pour over roly poly and sprinkle with a little brown sugar ( not in the original recipe but I thought it would be nice :) ) Bake at 200C for approximately 30-35 minutes. Serve hot with custard, icecream or cream. ( or all three haha) To make my variation. Spread with Fig Jam and cover with thinly sliced apples and a sprinkle of cinnamon. ENJOY



08.01.2022 This is my Lamb and Lentil 'soup' with Parsley Dumplings. You can cook the dumplings in the varoma whilst cooking the soup underneath. Reduce the chicken stock to make more of a stew. ... I love the copious amounts of spices in this dish. I put around 2 Tablespoons of Cinnamon, a couple of teaspoons of Tumeric and three big pieces of fresh ginger. You can just feel its healing power. Perfecting the Thermomix conversion recipe and then I will post for you.

03.01.2022 Farewell Easter treats, we had a blast together but my body is suffering in oh so many ways. All the sugar and over indulgence has got my inflammation peaking. Time to get back on track. I need to bring in the big guns again.... I am opting for (mostly) plant based, sugar free, gluten free, dairy free living for a while and see where it takes me. Back on the celery juice and Detox smoothy this morning. Chicken broth boiling away as we speak. Tonight we are having mushroom and lentil bolognese on cauliflower rice. It's not easy to give up the things we love but sometimes you just gotta do it. I'll keep you updated with my meat free recipes and let you know if it actually makes a difference to all the joint pain I have been experiencing. Gotta love hormonal changes. ( Not) Next life, I'm coming back as a bloke. Thought I would post just one more picture of all the evil things I have put in my body over the last few weeks. Oh but it was good while it lasted. Haha

02.01.2022 Finally got around to making Ajvar. Traditionally made with red bell peppers but I couldn't get those, so used red capsicum and eggplant. The only time consuming part is roasting the skins of the capsicum and eggplant to get that delicious smokey flavour. ... I served it on some fresh ciabatta as a bruscetta, topped with some mushrooms and crumbled feta. Mmmmmmmm I followed the recipe on here.
