19.01.2022 Zucchini This is just too easy Prep: 10 minutes Cook: 3 -4hours on high hours or 7 - 8 hours on low, plus 10 minutes Ingredients:... 1 cup chopped carrots 1 cup chopped celery 1 cup chopped onion 2 tsp. chopped garlic 2 tsp. Italian seasoning 1/2 tsp. onion powder 1/4 tsp. dried thyme 1/4 tsp. each salt and black pepper 2 bay leaves 6 cups reduced-sodium chicken broth 14 oz. (about 2 medium) zucchini 4 cups roughly chopped spinach leaves Optional seasonings: additional salt and black pepper Directions: Add all ingredients to a slow cooker except zucchini and spinach. Mix well. Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours (While your at work), until veggies have softened. Once soup is almost done cooking, use a spiral vegetable slicer to cut zucchini into spaghetti-like noodles. (If you don't have a spiral veggie slicer, peel zucchini into super-thin strips, rotating the zucchini after each strip with a potato peeler.) Roughly chop for shorter noodles. If cooking at high heat, decrease heat to low. Remove and discard bay leaves. Stir in zucchini noodles and spinach. Re-cover, and cook for 10 minutes, or until zucchini noodles have slightly softened and spinach has wilted. MAKES 6 SERVINGS Alternative: Use chicken broth for flavor, but feel free to use vegetable broth for a vegetarian-friendly spin!

The chicken and pineapple filling will spill over the edges of the shells as you fill them, but that gives a sense of abundance. Stick to the fruit theme through dessert, and offer a fruit sorbet or chilled Mandarin oranges. Ingredients:... Pineapple with Curried "Chicken" Using the pineapple shells as serving dishes adds a touch of glamour to this unusual main course. The "chicken" and pineapple filling will spill over the edges of the shells as you fill them, but that gives a sense of abundance. Stick to a fruit theme through dessert, and offer a fruit sorbet or chilled Mandarins or oranges pieces. 1 large pineapple, quartered with leaf end intact 2 Tbs. vegetable oil 1 onion, diced 500gms chicken strips 1 red Capsicum, seeded and diced 1 Tbs. curry powder, or to taste cup vegetable stock or low-fat coconut milk 4 Tbs. dried peanuts for garnish 4 Tbs. cilantro leaves for garnish Instructions: 1. Slice central core and all fruit from each pineapple quarter, taking care not to cut through shell or to disturb leaves on stem end of each quarter. Discard core and two hollowed-out pineapple quarters, and cut pineapple chunks into cubes. Set aside. 2. Heat vegetable oil in large skillet over medium heat. Sauté onion 3 to 4 minutes, and add chicken strips and diced red . Sauté Capsicum 3 to 4 minutes more. Stir in curry powder, and add stock, stirring to combine well. Season with salt and pepper, and remove from heat. 3. Arrange pineapple quarters on individual serving plates, and scoop equal portions of curry mixture into each shell. Garnish with peanuts, cilantro leaves and shredded coconut.

02.01.2022 FRESH MANGO CHICKEN 2-3 fresh Mangos sliced or diced 1 tablespoon Sesame oil 1kg Chicken thigh fillets, halved 1 brown onion, sliced... 1 red capsicum, seeded and thinly sliced 1-2 garlic cloves, crushed 1 teaspoon finely grated ginger curry of your choice to taste 400ml coconut milk 1/2 cup (125ml) chicken stock Steamed Basmati rice, to serve Chilli or coriander for garnish Lime wedges, to serve Cook (Fry) onion, garlic, ginger, capsicum in pan with oil and set aside while you brown and cook through the chicken. Then add back the ingredients you set aside. Add the stock,curry and bring to the boil add Mango and coconut milk simmer till ready to serve with rice and garnish with either or chilli or fresh coriander and lemon wedges on the side, Easy and delicious!!
