22.01.2022 Some coconut and strawberry curd macarons. It’s been a little bit of a break with Easter but back in the grind. Testing out some recipe variations.
22.01.2022 Today was massive- 83 cupcakes + 12 that went out as a trial run. Coconut and vanilla cupcakes as a little Easter treat.
22.01.2022 I’ve spent today tackling a new challenge. One side is a Black Forest mudcake and the other side is a lemon and poppy seed w/ lemon curd and swiss meringue buttercream. The bark is made from modelling chocolate and fondant.

But I am so bloody proud of what I’m creating- so so so bloody proud- I could hardly walk 100m without feeling like my leg was being ripped apart a million different ways 12 months ago and today this beautiful cake went out made from scratch. By me. Caramel mudcake with white chocolate ganache and a chocolate mudcake with dark chocolate ganache.
13.01.2022 Layers of spiced caramel mudcake and dark chocolate mudcake w/ salted caramel ganache, a white chocolate drip and a meringue wreath. What a whirlwind Sale has been- onward and upwards- grateful for the opportunity I had to learn and grow as a person and as a baker.

08.01.2022 Honey- I’m home!!! After a 4 week holiday travelling through Europe and Iceland it feels lovely to be back in the kitchen. Today I had my go at the wagon wheel- sugar cookies with raspberry jam and homemade marshmallow- covered in some milk chocolate and freeze dried raspberry.
