25.01.2022 Hello to all the Mummies, It’s been a busy couple of months and I haven’t had much time to post. Shortly I will be putting up a revised menu. A couple of the cookies are coming off and a couple of others being added in their place. There will also be a new order size being added. I may even get time to put up photos of an experiment I’ve been working on. But only if I can finally get it right.
25.01.2022 Hello to all the mummies. Here are a couple of different examples of the espresso cookies. One is flour based and the other oat based. Both are nice and chewy though the flour based one has a bit more crunch in the surface. I'm still not sure which one I prefer more.
24.01.2022 Hello to all the mummies, I'm going to be away for the next few days so after tonight I won't be baking again until Monday night for delivery on Tuesday. Enjoy the new years break and I'll be back posting in the next few weeks.
24.01.2022 Hello to all the mummies. So we had a birthday recently and like most 1st birthdays we wanted the little one and her friends to be able to eat the cake without complete sugar meltdowns. First thing was to make it square so the little ones could have pieces from the sides that wouldn't crumble. Next was to make something both bubs and mums could enjoy. So here we have the gooey choc raspberry cake. Only 100g of sugar and 100ml sweetened condensed milk to a decadent 1kg cake. No lactation ingredients this time. Just awesome birthday cake.
21.01.2022 Hello to all the Mummies. It's been a while since I posted but I just had to share. I generally get one jumbo sized egg (66g) from each of my girls per day with the occasional 80g + egg here and there. Well today I've had check if any of them are limping because one of them produced this monster. To give some perspective there it is beside a normal jumbo egg. Wow.
21.01.2022 Hello to all the Mummies, Following on the theme of tart flavors with buttermilk muffins, here is the latest installment: Pineapple and coconut muffins. They have less sugar than would usually be used in muffins because the pineapple gives a sweet, slightly tangy edge while the coconut keeps them moist.

20.01.2022 Hello to all the Mummies, Since I've started experimenting worth low/no sugar cakes my little one has decided that if I have cake she wants a piece too. So today with the miserable weather we're having i craved something fruity. I haven't come up with a name yet but this one has only a bit of sweetened condensed milk and a powdering of icing sugar. Aside from that all the sweetness comes from the fruit. It's got; coconut, apple, saltanas, banana and apricot with a little cinnamon and clove to bring out the flavor. And the little one loved it (with the top sliced off).

19.01.2022 Hello to all the mummies. Congratulations to Kerryn Davies on being the 100th person to like the page. Just for you Kerryn a free order of anything off the menu as well as a sample of something I'm trying out for the daddies. It can also be hard for the daddies to keep their eyes open with all the late nights so I'm playing around with coffee infusions in some cookies. Speaking of trying things out, here's a serving suggestion for the lactation shortbread: raspberry cream shortbreads. They're done with fresh raspberries and vanilla cream.
18.01.2022 Hello to all the Mummies, My wife requested that for her birthday she get something "fruit-salady" and not cake. So today was spent hunting up seasonal fruits and trying to get my old meringue recipe to work in the humid weather we're having. And here we are. Not lactation, but very tasty and I'm willing to say healthy.
18.01.2022 Hello to all the mummies. So I've been having a little play again. This time around I had a bit of shortbread mixture left over from an order and just couldn't let it go to waste. So here we have Spiced Cherry Lactation Shortbread. It's not overly sweet or as buttery as shortbread is usually but it's something all is own. I'll be sending out samples with orders over the next few days and see what the feedback is like.
18.01.2022 Hello to all the Mummies. I will be taking a vacation starting this Friday. I can take orders up to tomorrow afternoon (Wednesday 10th May) for delivery on Thursday and then I will be away until Saturday 20th May. I will be able to take orders then for delivery on Sunday 21st.
16.01.2022 Hello to all the Mummies, I will be taking a few days off next week. So last orders will be taken on Monday 20th for delivery on Tuesday morning and then I will start taking orders again on Saturday 25th for delivery on Sunday. On another note; Ive been craving the sweet flavours recently so after a bit of experimenting heres the Rich Pear and white chocolate cake. Its made with a sweetened condensed milk base and plenty of white chocolate chunks. I added the pear because its a great flavour combination and it sort of counts as fruit.
15.01.2022 Hello to all the Mummies, So when its 36c and your toddler needs entertaining heres a fun one; Lemonade scones. And because rounds are boring we did braids. Her favourite part was washing up so no complaints from daddy on that count.

14.01.2022 Hello to all the Mummies. As promised here is something i messed around with yesterday. It's a gooey white chocolate and cranberry cake. Instead of sugar it was made with a combination of sweetened condensed milk and desiccated coconut. And yes, it's still got the lactation ingredients in there.
14.01.2022 Hello to all the Mummies. I will be away for a few days next week so I won't be doing any baking from Monday to wednesday (20th to 22nd). Last orders week be taken on Sunday for delivery Monday and then I'll be away until Thursday when I'll start baking again for Friday delivery. Now I'm off to see about Wiggles tickets.

So here we have the Gooey Chewy Green Jellybean Cookie. Just the thing for a late night craving. Oh, and it's lactation too.

11.01.2022 Hello to all the Mummies, I'm just finishing up a gift basket for a couple who's little one came into the world in the last couple of days. There's something there for both parents. Lactation cookies, muffins and a loaf of soda bread. Still working on the packaging though.
10.01.2022 Hello to all the mummies, Continuing on my current phase of low sugar tea cake experiments is the Banana Peanut tea cake. It's made using buttermilk and ground up oats so that you still get a light moist texture even with the lactation ingredients. It's got minimal sugar in the mixture but the icing sugar dusting adds that little bit of sweetness while the small chunks of peanut add the texture.
10.01.2022 Hello to all the Mummies, I just realised how long it has been since I posted any of my experiments. It's not that I haven't been making weird and wonderful thing (sometimes just one of those), more that I have not been taking photos. So here's today's challenge; a guest that can't have any form of cocoa but with a sweet tooth and bananas to use up. This is the Banana and white chocolate loaf with a peanut crust.
09.01.2022 Hello to all the Mummies. Somebody commented recently that they do not have a sweet tooth and found the cookies a bit too rich. So after a bit of playing around I settled on using an old Irish Soda Bread recipe and adding the lactation ingredients. The results are pretty tasty, especially warm with a bit of melted butter.
09.01.2022 Hello to all the Mummies, We recently had something given to us by a friend visiting from Germany. It's called Zuckerrübensirup and is something like molasses. Today I finally got a chance to dig out an old recipe to use it. This is a twist on a Dutch recipe for for a type of soft biscuit that is especially nice on cold wet winter days while you are cooped up inside. The smell of these baking is especially homey. So here we have Zuckerrübensirup Ingwerkeks. Also known as Soft Molasses Ginger Cookies. I'd also like to send a big 'Thankyou' to Gaayathri at Baby Peppers who gave us a beautiful handmade blanket for our little princess. On these cold nights it has been very appreciated.
09.01.2022 Hello to all the Mummies. A couple of days ago I got a request from a family member in Ireland for a chocolate biscuit. The more chocolate the better. As much chocolate as I could fit in. Now this can be a challenge as there's a big difference between mud cake and a cookie, especially in the texture. So after a bit of consideration and a couple of experiments here is the result. Cookie texture and all. A rich chocolate cookie. To get the rich choc flavour I creamed butter and cocoa, then used that to substitute half of the coconut oil. A couple of other tricks to bring out the chocolate and I'm pretty happy with the end result. They've also been popular with my taste testers.
08.01.2022 Hello to all the Mummies. So I had a bit of a mad scientist morning in the kitchen after realising that the song i had been humming for the last three days was 'mumbles the monster'. One of the hazards of being a stay at home dad during the week is over exposure to the wiggles. There were some spectacular failures (let's not talk about the caramel & apricot... i guess goo is the best description because it sure was not a slice.) and a couple of successes. So here they are: ...Chewy apple jelly muffins (apple and green jelly bean), And kiwi coconut buttermilk muffins. And they taste pretty good. See more

05.01.2022 Hello to all the Mummies, I had some fresh garden grown egg plants given to me by a colleague this week and I couldn't just grill them. So after a little bit of thought and a couple of minor adjustments to the recipe I've come up with something different. Aubergine Soda Bread. A little extra salt to bring out the egg plant flavor and I think I have something to go with the fresh tomato and basil soup I've been craving.

04.01.2022 Hello to all the mummies. I've been having a play with the more savory flavors recently, with mixed results. Here's a dense Banana and Ginger tea cake. The sliced ginger gives it a nice little zing.

It's been a while since I've had the time to have a play in the kitchen but today was cold, there were some nectarines that needed to be used and I wanted something to go with my coffee. So here we have a coconut and almond flan cake with white nectarines. It's not too sweet to give to my little princess either so I may get to have my coffee in peace.

02.01.2022 Hello to all the Mummies, Well this last experiment has not been successful so far. The Caramel drops keep burning and I cant get the flavour quite right so I think Ill move on to something else. In the mean time, here is the new menu Ive been promising. I was planning to remove a couple of flavours but as luck would have it, those two have started getting ordered again. So theres a new addition with the Double Choc and for those mums wanting a few extra Im now doing orders of 15 cookies as well.

01.01.2022 Hello to all the mummies, Here are Kerryns (our 100th page like) cookies all ready to go. Those darker round ones are the first of the cookies designed especially for the Daddies. (Mummies are welcome to try them but if you're breast feeding it's not recommended.) These are Espresso and spiced chocolate cookies. And they pack a punch. Each one has a shot of espresso in it. Good for Daddies who have been up all night. I'll keep you posted on other flavors as they are created.
