25.01.2022 Beautiful olive sourdough bread for Christmas Day lunch. With the softest lightest crumb inside and the lovely flavour from the kalamata olives. I just made a normal white loaf and added a half a cup of sliced kalamata olives to the dough after adding the starter and salt and kneading then before the folds. Details: 447 gms strong white flour 335gms water, 85gms starter/levain, 7 gms salt and half a cup of sliced kalamata olives. My starter was half rye half white.... 5 Coil folds every 45 minutes then pre-rounded and a 20 minute rest, then shaped into banneton for overnight cool proof 15 hours then baked 29 minutes with lid on @challengerbreadware pan at 250C and 13 minutes with lid off at 230C to crisp and blister the crust. 24.01.2022 I’ve managed to keep this beautiful sourdough fruit loaf as all my recent bakes have gone to clients so I could cut and taste the delicious spices of cinnamon, freshly grated nutmeg, cloves and allspice ..I added a mix of golden raisins, currants, sultanas and cranberries soaked overnight and around 20% spelt. Slide for more photos ..I still did my normal coil folds which is much easier when handling dough filled with fruit which I added at the first fold, and a 15 hour cold proofing. 15.01.2022 Sourdough baguettes are so rewarding to make and I’ve been making many for orders lately. I don’t make them long and skinny I make them with a little volume and a 20% spelt flour. High hydration is also a key point in baking baguettes with a lovely soft open crumb and I make them at about 80%. 09.01.2022 Blister heaven!!!! blisters are generally formed when you take your dough straight from the fridge after long cold proofing and bake it. In fact I've met many people who thought that blisters were a fault in the sourdough loaf! This is not the case! Bread blisters come from CO2 slowly leaking from the surface of the dough while it ferments for a long time in a cold fridge. The crust is dark and soo crunchy and tgr crumb is soft .. it’s taken years to perfect this with whole-wheat flours, gentle handling during coil folds and reasonably high hydration are keys. Don’t despair just keep practicing and handling the dough gently while doing your folds during your bulk dough development. 03.01.2022 A gorgeous crispy crust on this 15% rye and 20% spelt sourdough today the crumb is open and soft as the hydration was 80% ..with a long 19 hour cold proofing giving it a gentle sour note ..I generally bake my loaves for 29 minutes at 250C with the lid on the Dutch oven and 13 minutes with the lid off at a lower temperature of 230C I find this perfect timing for rise and then crisping the crust. But...the example here is in the scoring ..the loaf in the left hand side I scored a quick slash with no angle and not deep ..the one on the right i scored deep and at an angle giving the bloom the ability to lift and form an ear. So you can see it’s all how you hold the scoring lame and how you score it that gives different results.
