09.01.2022 Venison Burgundy 1 Tbs olive oil 20 g butter Backstrap of Venison, sliced into steaks (about 2cm thick)... 200 g mushrooms 3 french eschalots 1 Tbs plain flour 1 cup sweet red wine 1 Tbs dijon mustard 10 b fresh tarragon, finely chopped Heat oil & butter in frying pan over medium heat. When melted & hot, add steaks & cook for 3 minutes each side or until golden. Transfer to a warm plate & cover loosely with foil. Cook potato for mash. Add mushroom & eschalot to pan. Cook for 8 minutes until mushroom is golden. Sprinkle over flour & stir. Cook for 1 minute. Slowly add wine & 1/2 cup water, stirring constantly, & bring to the boil. Whisk in mustard & tarragon. Season with salt & pepper. Return steaks to pan & cook for 3 minutes for medium rare. Serve with sauce, green beans & mashed potato
