25.01.2022 First post for the season! The drought finally caught up with us and we have barely had any produce come out of the paddock. Nonetheless, we finally have a small amount of watermelons and pumpkins. 23.01.2022 Spaghetti squash burrito! As with all my cooking it is, just go with what you like and what is in your fridge. Tonight I used half a cooked spaghetti squashI, black bean mixture, homemade cabbage pickle, tomato, avocado .... but you can use corn, capsicum, cheese .... the options are endless. Put together and eat. 23.01.2022 Now is the time to pick your pumpkins! As tempting as it is to pick your pumpkins early in the season, if you want your pumpkins to keep through the Winter months and have a really good depth of flavour, then you are best to leave them on the vine for as long as possible. Once the plant has died off a bit and they have had a couple of frosts on them you can pick them and save them for the coming months. The harder the stork the more mature and more likely they are to keep.... This jap pumpkin is just perfect - pale green skin and a hard stork. We picked 3 tonne last weekend and they will be delivered to @wollombiroadprovidore and @lagunavillageprovidore this week. Pop in and support local shops that support local farmers.

04.01.2022 Wow, what a difference just a couple of weeks can make on the flavour and colour of the honey. The jar on the left was my first harvest of the season just two weeks ago. Then the blossom went crazy and within two weeks I had full hives and the light coloured honey, which I harvested yesterday into the jar on the right. We currently have jars of honey for sale at @myrtlehousewollombi , @lagunavillageprovidore and @fredeli472

04.01.2022 We are a little bit excited to have the Land Rover out and full of watermelons. The drought has been tough this year and despite random drops of moisture falling from the sky to make the paddocks green, the severe heat has been unkind. So for now we are celebrating the fact that we have produced yummy watermelons and hope to have them in regular supply over the coming weeks. 02.01.2022 It is sad to see the crop of canola harvested today. It has been such a pleasure to come home to this happy crop for the last couple of months. But we are making hay while the sun shines.

02.01.2022 So the heat hasn’t been kind to us this season. Like us, the watermelons have wilted in the heat and there is nothing to pick. We are very disappointed to not have a long and productive season, but that is just farming. However we did manage to rescue these little gems from the paddock and the heat. These little gems are called spaghetti squash. Funny thing is that when I asked Dean if he planted any seeds he said ‘no’, so I went ahead and planted some seeds. Turns out he d...id plant them and a lot of them. So now we have a mountain of these little beauties! There were ‘words’ had between us about the over planting of this variety but the words were brief as I love these squash and now I can eat them all the time. To cook you just cut them in half lengthways, scoop out the seeds, season with salt, pepper, garlic and olive oil, then bake until soft. Let them cool slightly before dragging a fork through to flesh to get the spaghetti texture. They are a great gluten free alternative to pasta. I recommend serving the sauce on the side as it does get mushy with the sauce. You can also create fritters with the flesh. But don’t worry, these guys are on high rotation in my house so I will pop a few recipes up in the next week.
