02.01.2022 Choc Peppermint Protein Balls A great little lunch box addition or afternoon treat to decrease the sugary temptations. High protein, healthy fats, no added sweeteners.... A handful of dates, a handful of nuts (i used almonds and walnuts), a tablespoon of cocoa powder, a tablespoon of chia seeds, half a teaspoon of vanilla bean paste, a tablespoon of melted coconut oil. A tablespoon desiccated coconut. 3 drops of peppermint essential oil. Bang it together in a blender, then using a teaspoon to portion, roll into balls and roll through some more desiccated coconut.
