22.01.2022 All the hens at Mosstock Cottage Garden are now laying beautifully following the arrival of Spring! Therefore I am looking for a few different ways to prepare eggs: Coddled Eggs are very yummy! I put a small dob of butter in first, then break the egg, or eggs depending on the size of the Coddler I am using, on top of the butter. Then on top I place chopped up bacon, cheese, onion, fresh herbs - all or a combination, salt & pepper. Screw the lid on tightly & steep in boiling water for about 15 to 20 minutes depending on the size you are using. My Egg Coddlers are made by Royal Worcester. They can often be found at antique markets for about $20 for the 1 egg coddlers. Bigger ones are harder to find.
