13.01.2022 Did you know that many vineyards in the Hunter Valley grow their grapes on a plot of land then send offsite to expert winemakers to create a distinct, individual flavour based on the conditions the grapes were grown? This process is very similar to what we do on the Moss. So often we get asked if we make the salami ourselves and we always explain that we are the pork producers, we breed the animal, feed it the right nutrients and give it a natural environment to grow and be happy. When our livestock is ready for slaughter our pigs go to a wonderful Italian family who process our pork creating small goods that compliment our pigs and our goal of food production on a small scale.
