15.01.2022 Red Lentil Soup (adapted slightly from a friend's mum ) Easy and frugal af! - fresh garlic cloves (use as much or as little as you like... - red lentils (approx 500g) - 2x 1L plant based chicken stock - 2-3 tsp ground turmeric - 2-3 tsp ground pepper - a good glug of olive oil - 1-2 lemons Chop up the garlic and add it to a saucepan with the oil, pepper and tumeric . Sautee until aromatic. Rinse your lentils then add to the pan along with the stock. Bring to a gentle boil and cook until the lentils are tender. Use a immersion blender to blend into a nice thick soup. Add in fresh lemon juice to taste. (I used 2 lemons worth) ** This will make a VERY thick soup... Feel free to add extra water/stock to thin out to your desired consistency.
