25.01.2022 Having had a strong relationship with the North East and Gippsland Regions of Victoria over the years, the MoVida Team have been greatly saddened by the loss of life, homes and wildlife during the recent catastrophic fires. We have decided to show our appreciation to the people who have been affected by these events in the form of the MoVida Bread for the Bush Fire Appeal .. Welcome to Galicia. The verdant green region on the northwest tip of the Iberian Peninsula that produces some of the finest wines in Spain, the best seafood in Europe and some of the best beef in the world. The team at MoVida are celebrating the food of the region in a special four course lunch on Satu...rday September 14th at 12 midday at MoVida Aqui. It will be a day of food, wine and fire with Fremantle Octopus and Txuleta 1882 dry aged old cow beef cooked in true Galician Festival style. Octopus is king in Galicia where it is called polbo. We are extremely lucky to have some of the best octopus in the world available to us here in Australia courtesy of Fremantle Octopus. Having started in 2000, Fremantle Octopus has created a sustainable octopus fishery in WA utilizing a species that has exceptional flavor, flesh structure and generous size. In true Galician style were cooking it in large pots outside in the traditional Galician Festival Style. It will be served with waxy potatoes and sprinkled with the best paprika. We couldnt explore the Galician region without featuring its beef in its signature style. We have teamed up with a new producer in Australia in this field, Txuleta 1882. The cattle from Txuleta 1882 are retired dairy cows free to roam in pasture on a farm located in the hills of South Gippsland. This has resulted in beef that is prized for its rich depth of flavour, greater muscle development and increased fat marbling. We also welcome back Troy Wheeler from Meatsmith, the artisan butcher of Smith St. Fitzroy and Barkley St, St Kilda. Troy has carefully looked after the hand selected cows from Txuleta for a total of 5 weeks. The MoVida crew will be cooking this superb beef over coals out on the forecourt in the traditional Galician manner. Afterwards we finish with Tarta de Santiago, a traditional tart made with almonds and quince. Each course is served with matching Spanish beer, cider and wines from Alimentaria. 07.01.2022 This November MoVida Aqui will be celebrating its 10 year anniversary. To mark the occasion, Frank and the team are bringing back some of our iconic dishes from the past decade. Each dish will represent a part of Franks journey as a Chef, while MoVida Aqui found its own identity within the MoVida family. For one week we will have a special classic selection of tapas and raciones, as well as a set menu that highlights what we think are the best of MoVida Aqui over the las...t 10 years. The menu will showcase some amazing ingredients sourced by suppliers who we have been providing us with produce since day one. Think fresh caught and fried Calamari from Con and George at Clamms Seafood which is then served in a soft bun with mayonnaise and guindillas. MoVida Aqui has always cooked with charcoal so for this classic menu we have brought back our Josper roasted asparagus, served with Romesco. Probably our longest association would be with Spring Bay Mussels. We have an amazing relationship with Phil Lamb so we will bring back the Spring Bay Mussels cooked a la plancha with parsley, garlic and fino. To mark the occasion we are also thrilled to announce that another of MoVida Aquis long time suppliers, Capi, have designed a special 10yr anniversary bottle to commemorate the occasion.
