19.01.2022 Royal red prawn, on tonight’s menu. This is a deep sea (500metres) prawn, very fragile and sweet, they have been fished in Wollongong. I haven’t work with them much before as they are mostly sold peeled, but this morning I could get them whole. Thanks Alex from @sydneyfishmarket for recommending them to me. Alex is doing an amazing work at holding the fish market tour early in the morning. A must go for any seafood lovers as he’s sooooo passionate about Australian seafood.
