24.01.2022 This is just half of an old retired dairy cow we received this week from the small family farm Txuleta 1882. The size and the yellow fat colour is evidence of many years spent on pasture. Inspired by the tradition of Txuleta in the Basque region of Spain; Josh and Jyoti @txuleta1882 select and retire old dairy cows in the surrounding Gippsland region. They specifically choose dual-purpose breeds, like Fleckvieh, which can be used for both milk and meat. The animals are then ...raised to between 5 and 10 years of age, sometimes older. Maturity develops rich flavour and marbling. Well be enhancing this further by hanging the primal cuts to dry age before release. Pre-orders are available, please just pop into the store. Its with thanks and respect we reflect that this heifer has now given us both milk and meat - something that wouldnt be possible without the work of this small farm. ps. for anyone in the Eastern Suburbs; the other half is @victor.churchill

23.01.2022 Hot #freerange Cornish Pasties @properpastyco - to warm you up this cold drizzling Saturday. And proper they are! Julian at The Proper Pasty Co makes these to strict criteria set out by the Cornish Pasty Association. The beef in todays batch is from Cowobbee Beef, raised on Lynden Farm #biodynamic in Oberon.... Even the rendered leaf lard used in the pastry is pasture raised and supplied by us. Leaf lard is traditionally used for making pasties, pastries and other tasties because of its superior quality and minimal flavour. We collected the lard from the pigs weve received over the last couple of weeks. These have come to us from @melandapark @merrifieldmeats @tathraplace . . . #proper #cornishpasty

We are however pleased to announce that Emilios Specialty Butcher will open in our retail space next week. Although a difficult decision, this move is an exciting evolution for us personally and Mr Baillie & Co. 19.01.2022 We hit the road last Sunday to visit two of our main producers: Tammy @lynden_lamb and Paul from Cowobbee Beef. Lynden Farm is home to both their lamb and beef. It has been Demeter Certified BioDynamic for over 20 years now. Being Demeter BioDynamic not only certifies that soils and produce are free of chemical residues, it also certifies that regenerative farming practices have been implemented. A big focus for Australian Demeter Bio-Dynamic is on building soil health and ho...listically supporting the natural environment. BioDynamic farming methods build topsoil and microbes in this topsoil, which aids in moisture and nutrient retention. It also helps soils to store more carbon and act as a carbon sink. In principle the holistic environment influences the health and growth of animals and plants. BioDynamics works with the cycle of nature through crop rotation, cover cropping and letting insects and bugs do their natural thing. Tammy and Paul rotate crops (like rye and oats) with their beef and lamb. The crops not only feed the animals; the root system pulls nutrients down to feed the soil. Its a cycle - the healthier the soil the deeper the root system and the deeper the nutrients can penetrate the soil to improve the health of the soil. For Lynden, growing these important crops has been challenging in current drought conditions. The farm was looking green when we visited, from a recent burst of rain, but whats on the ground isnt a high protein feed for the animals. The crops they sowed just havent had enough water to grow. Tammy and Paul were, nonetheless, feeling fortunate and grateful to have some feed in the field. Like with all Demeter BioDynamic farms, Lynden Farm uses composted manure to fertilise. (AKA Formula 500). Composting the manure activates microbes which are then more readily active in the soil for a more sustained benefit. A big thank you Tammy and Paul. 17.01.2022 Hi guys, were sorry but we will be open today Wed 18 March from 1pm to 6pm only ...and from tomorrow will change our opening hours as outlined below. At this stage we have plenty of produce and its coming in regularly!! Our challenge is having the time to break cuts of meat off a whole animal. Unfortunately, with a small team, we are are unable to do this while our shop is open. We are really sorry for the inconvenience. Please bear with us at this extreme and unpredictable... time. With this afternoon's announcement, we thought it time to provide an update on our current plan of action and answers to some of the questions that have come up in the last week. ...... DO YOU HAVE PRODUCE? There is plenty of produce and its coming in regularly but due to heightened demand we may not have what you want available when you come in. We recommend popping into store and seeing what we have when you need it. We are doing our best to get as much as we can cut and into the display cabinet. If you cant see what you are looking for, just ask us, theres a good chance we can cut it for you. ... HERE'S WHAT'S ARRIVING W/C 23 MARCH 2020: It will take us some time to cut after it arrives so if you want anything specific, visit in the afternoon that it arrives or following morning. This is subject to change - but hopefully gives some assurance that there is produce coming regularly. MONDAY Beef from Watervale and River Park Farm, Lamb from Cowra. His Pigs Head Sausage is exactly the flavour profile, texture and quality we know from LPs Quality Meats. 11.01.2022 With Christmas approaching, heres some things to know about every single leg of ham we sell. 1. PASTURE RAISED Pastured pigs are born and raised outdoors for their entire lives. They have unrestricted daytime access and are kept in stocking densities that give them freedom to roam. Its essentially #freerange but better. Fact: less than 5% of all pork consumed in Australia is even free-range.... 2. SMALL LOCAL FARMS We can guarantee that! because every leg has come from pork that we have prepared. We tag them as ours and send them to a local Sydney smokehouse, where they are cooked. These are the farms where our pork has come from @melandapark @merrifieldmeats @tathraplace @talucaparkfreerange @crackwillowfarm Fact: Only 30% of the bacon and ham sold in Australia is made from Australian Pork. 3. 06.01.2022 Good news story. @myallsprings #organic Lamb and Beef is back in the fridge this weekend. Myall Springs was one of the very first farms we built a relationship with when we started out at Mr Baillie & Co. Sadly, Matt and Mel have had to manage harsh drought conditions over the last few years. They havent been able to supply us with produce... until now. This is our first delivery in two years. We are extremely pleased that the farm is rebuilding and very fortunate to receive their wonderful organic produce again.

As well as being a whole animal butcher, Rick has had experience as a meat processor and meat inspector. He knows how to sharpen a knife (taught us a few tricks!) ...has already shared his favourite beers with us ...and is a fab person to have around. ... Make sure you holler Hi next time you pop in.

05.01.2022 We had the wonderfully passionate Luke from @tathraplace visit this morning. We get pork and ducks from Luke and Pias farm in Taralga NSW. Tathra Place Free Range is a multi-species farm where a variety of animals are grazed and crops planted in rotation to each other. The idea is to mimic the regenerative cycle of nature, as close as possible commercially. This approach is guided by principles set out by American Farmer Joel Salatin. The rotation improves soil health over ...time. Luke and Pias farm is chemical, antibiotic and hormone free ...and of course free-range. 04.01.2022 The ultimate cold weather comfort food @broomfieldpieco ...and definitely not your average meat pie. This basque inspired beauty is made using the old retired dairy cow we got from @txuleta1882 farm. We dry aged the beef for 4 weeks before Ryan at Broomfield worked his magic. Its braised in a rich red wine, tomato, onion and paprika sauce and parcelled up in an all butter pastry.

Its chemical free and operated using regenerative farming principles. Central to this is the grazing rotation of a variety of animals. We get beef, lamb and pork from Katrina and Sam @redleaffarm. Following a tough couple of years in drought we havent had produce often but when we do its always worth the wait.
