23.01.2022 Mr Chen's Garlic Mushroom Egg Noodles INGREDIENTS 2 serves Mr Chen’s Thick Egg Noodles [baskets approx 50g] ... 2 free range eggs 2 tablespoons oil 2 tablespoons oil butter 4 garlic cloves, minced 1 tsp grated ginger 6 cups mixed mushrooms [we used swiss, button and oyster], cut into bite-size pieces 5 spring onions, finely chopped 2 tablespoons Mr Chen’s Soy Sauce 2 tablespoons Mr Chen’s Oyster Sauce 2 tablespoons Mr Chen’s Rice Vinegar 1 tablespoons ketchup 1 tsp brown sugar DIRECTIONS Add water to a wok, once boiling, add eggs and noodles, boil for 7 minutes. Remove eggs and run under cool water, set aside. Cook noodles for a further 7 minutes until cooked through. In a wok, heat the oil over high heat. Add oil, butter, garlic, ginger and spring onions, cook until soft. Add mushrooms and cook until browned. Meanwhile combine the ingredients for the sauce in a small bowl. Add the noodles and stir-fry for 1 min, top with sauce and heat through until the noodles are coated and the sauce reduces and gets a little sticky. Divide noodles among plates, top with a soft-boiled egg and enjoy!
