Ingredients... 280g packet fresh chow mein noodles 1 tbsp peanut oil 500g chicken stir-fry strips 120g (3 cups) shredded wombok (Chinese cabbage) 100g shredded carrot 150g snow peas, thinly sliced lengthways 2 green shallots, sliced diagonally Lemon Sauce Ingredients 2 tsp peanut oil 2 garlic cloves, finely chopped 2 tsp finely chopped fresh ginger 125ml (1/2 cup) Chicken Liquid Stock 60ml (1/4 cup) fresh lemon juice 2 tbsp Chinese cooking wine 2 tbsp light soy sauce 55g (1/4 cup) caster sugar 2 tsp cornflour Method Step 1 Bring a large saucepan of water to the boil. Add the noodles and bring to the boil. Cook, stirring, for 2 minutes. Drain and refresh under cold running water. Drain. Step 2 Meanwhile, to make the lemon sauce, heat the oil in a wok over medium heat. Add the garlic and ginger. Cook, stirring, for 30 seconds or until aromatic.
