25.01.2022 When your told to bring a plate. In my case it’s a box! Headed out today with friends on a boat! Abit excited as we haven’t had an adult get together for some time! I was assigned desserts. ... (Of course duh..) Decided on a variety of things. So why not make up a grazing box! Easy to transport and left overs that didn’t make it into the box are snacks for the week!! (I’m so organised ) What I made Brownies baked caramel tarts raspberry shortbread tarts lemon curd tarts caramel slice almond biscuits healthy Twix slice nougat chocolate chip cookies mini eclairs and vanilla slice. 20.01.2022 Chicken Pesto Pasta I love my quick easy, under 30minute dinners. This one is one of those!... I made the pesto prior to making dinner so I didnt even wash the bowl, just went straight into making dinner!! Only variation I did tonight was I didnt have chicken thigh so I used breast. I also added 600gm instead of 500gm of chicken and cooked 500gms of pasta separately so I could bulk out the meal more! (Hubby had two servings and I still have 2x 750ml containers filled for sons lunches! 19.01.2022 HEALTHY Twix Slice Yep you heard right.... Healthy.... Dairy free. Paleo. Vegan. Gluten free. Dairy free. Sugar free. No bake slice! I kinda used two recipes for this to make my own. So I’ll need to write it out Literally tastes amazing! Healthy doesn’t need to be boring. Nor do you need not reward yourself with something sweet/naughty. When you have a thermomix you have the options to make the healthy and the not so healthy! I love my sweet snacks and am trying not to eat junk or sugar after dinner... soooo hard.... I loved the skinny mixers lamington slice but I love caramel like in a Mars bar or fantail...so kinda merged the two together. You can make the turmeric and ginger paste and store in the fridge. I used fresh turmeric but you can also use powdered!... It has some kick and hubby commented that he can feel it ... must be doing something... hes already drunk about 500mls. This recipe makes about 1litre. 05.01.2022 Summer dinners Today I did some meal prepping and snack prepping. And as everyday dinner. Dinner was bbq steak. I added a family fav pumpkin gnocchi bake and whipped up some zucchini wedges. Parmesan yummy crunchy chip-like wedges. Delish! And I had so many eggs to use up I made some hard boiled eggs as a side. Then I figured I needed some green so I added some chopped cucumber. Bam/dinner is served! Everyone’s plates were clean!
