24.01.2022 Young, fresh garlic! Small bulbs of young garlic are a welcome arrival in Spring. The flavour is most often subtle and grassy. The stems (also known as scapes) are delicious chopped and added to mushrooms, omelettes or stirfrys. Using a vegetable from ‘root to tip’ is the ultimate way to honour the resources harnessed in growing the plant & of course, reduce food waste. Where to find such beauties?... 20.01.2022 Dip into Spring A change of season invites us to shed a little of what’s past (winter foods) & slowly embrace the emerging (spring shoots & leaves). A perfect late breakfast this morning after foraging at @thebeachesmarket ...... spring asparagus, wonky & with stems still dusted in soil from Lenka’s stall, paired with very local pastured eggs, salt & cracked pepper. Simple perfection! These asparagus spears were special in so many ways:... wonky = homegrown proof the grower was there in person to chat with = social connection. the soil dusting =valuable healthy microbes from healthy soil for gut health eating seasonally = diversity of plant foods for a robust microbiome and of course.... 19.01.2022 BEAUTIFUL BROCCOLI As a true food nerd I just love finding small stems of broccoli like this bunch, abundant with leaves & fine stems. Broccoli leaves are every bit as nutritious as the floret and are delicious lightly steamed or sautéed. The fine stems are also delicious finely sliced on the diagonal & added to the steamer, or added to Spring broths & soups. Always add a healthy fat to your broccoli, such as grass fed butter, ghee or olive oil to allow your body to absorb... the fat soluble vitamins, D, A, K & E. Broccoli is a vegetable that continues to respire (breathe) at a very fast rate after its harvested, with its nutrient density declining as it ages. Therefore, look out for broccoli that is stored on ice or recently refrigerated, to keep it super fresh & be sure to use it within a couple of days of purchase! 15.01.2022 Getting ready for the week ahead.... a couple of hours in the kitchen on a Sunday afternoon can ensure that your fridge is full of nutrient dense options for breakfasts, snacks & lunches. 08.01.2022 WHOLESOME SNACKS Those of you who have teenagers in Yr 12 will know that it’s an intense time just now.. Trial HSC is done, major works are due and it’s crunch time leading up to their final exams. Sometimes finding opportunity for conversations with our young people is hard. Food is a wonderful bridge..... homemade nourishment is a wonderful way to show your love & to steady them for a moment to share a word. Preparing food from scratch also means you can fuel their brain...s & bodies for success, using healthy fats & nutrient dense ingredients. This afternoon I baked an aromatic batch of savoury scones based on the wonderful Spelt & Oat Scone recipe from the Ministry of Scones @Jude wholefood. Fresh rosemary replaced basil, parmesan replaces cheddar & yoghurt replaced buttermilk. You’ll find the recipe & video on Jude’s Instagram @judewholefood. 01.01.2022 HEALTHY SWAPS Making raspberry coconut slice this afternoon. There a few healthy swaps that are easy to make when baking to increase the nutrient density of your family’s food. SWAP OUT ... traditional high sugar jam SWAP IN 1 1/2 cup frozen organic berries + 1 1/2 tbsp maple syrup + 1 1/2 tbsp chia seeds. Stir frozen berries and maple over medium heat until defrosted. Crush berries with the back of the spoon. Stir through chia seeds and leave to cool slightly before incorporating into your baking. Make double and stir through plain yoghurt to make a delicious low-sugar berry yoghurt or dollop the berry ‘jam’ onto your porridge/muesli/pancakes.
