19.01.2022 The nights are starting to cool which means our Basil season is coming to an end . I take this opportunity to make a winters worth of Pesto. Easy fast meals are essential in my house! Classic Basil Pesto 2 cups Basil leaves packed... 1/2 cup parmesan 1/2 cup olive oil 1/3 cup roasted pine nuts (5 mins in the oven) 3 garlic cloves minced 1/4 teaspoon salt 1/8 teaspoon pepper Pulse Basil and pine nuts together, add garlic and parmesan scraping down the sides as you go. Add olive oil in a stream with food processor still on. Mix in salt and pepper. To freeze I leave out the parmesan until ready to cook. Pour into containers or ziplock bags and freeze. Toss pesto with your favourite pasta and vegetables, or add to a cream/butter sauce for creamy pesto, top fish and grill, add to your focaccia or use as a pistou in your favourite soup.

06.01.2022 With the weather warming up fast here in Coffs Harbour, our first Basil seedlings for the season are in! Lots of customers have been asking for Basil. No wonder it reminds us all of summer and better days
