18.01.2022 Lunchbox Idea #3 Easy and delicious spinach, feta and ricotta mini quiches! These are so simple to whip up and only require a few ingredients! Perfect for lunchboxes and breaky too! ... Ingredients 6 eggs 100g baby spinach 150g @dodoni_feta 150g ricotta 1 onion, finely diced 1 tbsp extra virgin olive oil 3 sheets of thawed @pampaspastry short crust pastry Method Preheat oven to 180 degrees. Using a cup, cut out pastry circles for the basis of the quiche. Add them to the base of 12 greased muffin tin holes and puncture some holes in the pastry bases with a fork. Cook in the oven for 10 minutes until they’re slightly cooked. Set aside to cool. Add olive oil to a frying pan and cook onions until fragrant and transparent. Add the spinach and cook until wilted. Set aside in a bowl to cool. In a separate bowl, add the ricotta and using your hands, crumble the feta and add it in. Then add the the onion and spinach mixture and stir to combine. Whisk the eggs and mix together with the cheese, spinach and onion mixture. Top the pastry with the mixture until the muffin holes are evenly filled. Cook in the oven for 20-25 minutes until the quiches are cooked through and golden. 09.01.2022 Three ingredient sweet potato gnocchi with baked salmon and greens! Such an easy and delicious dish to make! I used leftover baked sweet potato and salmon to make this yummy meal! The kids love it and can help make it too! Ingredients ... Gnocchi 2 cups organic plain flour 2 medium sweet potatoes 2 tsp salt Fillings 2 salmon fillets 2 tbsp extra virgin olive oil 1 tbsp soy sauce 1 garlic clove, crushed 1 large broccoli floret Handful of baby spinach Method Preheat oven to 200 degrees. Bake sweet potato and salmon in separate baking dishes with skin on in the oven for 40 or so minutes or until tender. Before baking the salmon, coat with olive oil, crushed garlic and soy sauce. Steam broccoli and spinach for 6 or so minutes until lightly cooked. Allow all of the above to cool slightly. To make the gnocchi, sprinkle flour on a clean bench. In a bowl, add flour and salt and mix to combine. Once combined, add to the bench and make a well in the middle with your hands. Mash the sweet potato with a fork or ricer and add it to the well. Add some flour to your hands and slowly mix together the sweet potato and flour until it forms a nice soft but not sticky dough ball. Divide the ball into 8 equal parts and roll them into cylinders. Cut gnocchi pieces approximately 2-3cm thick. Using a fork, stamp some pretty little lines on the top of each gnocchi. Add the gnocchi to boiling water and cook until they float to the surface. Strain and mix together with some olive oil to avoid them sticking together. Add the salmon, broccoli and spinach and mix together. Serve immediately and enjoy! 07.01.2022 Lunchbox Ideas #1 Spinach, banana and honey ‘Hulk’ Muffins! I’ll be spending this week posting some lunchbox ideas, this one is always a winner in our household! They’re nutritious, delicious and very easy to make! If you haven’t added spinach with sweet banana muffins yet, don’t worry, the spinach is so flavour neutral you can barely taste it! ... Ingredients 2 very ripe bananas 120g baby spinach 1 3/4 cups of wholemeal flour 1 tbsp of chia seeds 3 tbsp of water 1 1/2 tsp of baking soda 2 1/2 tbsp of honey 1/2 cup vegetable oil (can use coconut oil) 1/2 cup milk 1 tsp icing sugar (optional and I rarely add it, I just did to make them look prettier! ) Method Pre-heat the oven to 180. Combine chia seeds and water in a small bowl and let the chia seeds soak for 5 or so minutes until they become gooey. Add the baby spinach to a food processor and blend until the spinach is in small pieces. Mash banana in a bowl and add to the food processor. Are the rest of the ingredients and blend until combined. Line a 12 hole muffin tin and evenly divide the mixture to make 12 muffins. Cook the muffins for 20-25 minutes or until slightly golden. Sprinkle a little bit of icing sugar if you like, but they’re just as delicious without! Serve warm or cold.
