03.01.2022 These Shanghai style pork belly Zong Zi will be available from tomorrow lunch. We sold out so quickly last week so this week weve made more so more people can try them. Its a long process to make these little parcels of goodness. First we marinade the free range pork belly overnight, we also soak the glutinous rice and the bamboo leaves overnight. When its all ready, we flavour the rice and each little parcel is hand wrapped with a piece of pork belly (same fat to meat r...atio) hidden in the middle. Its then wrapped in bamboo leaves which gives the Zong Zi the unique flavour and fragrance. The string wraps everything together so all the flavour is locked inside and no bits fall out during the cooking process. It then needs to be boiled in high heat for one hour and cooked on low heat for four hours.
