13.01.2022 Hey, Im Sam. Together with Dave we are the new team of growers at Mushroom Forestry. Growing mushrooms is a dream come true for Dave and I as it combines both our skills and talents. Ive long held an interest in growing and working with fungi ever since I studied a Bachelor of Biological Sciences in my early 20s. Throughout my career I have combined my science skills and knowledge with my love of gardening and horticulture. Mushroom Forestry is a beautiful combination of art and science, farming and a connection with our local hospitality industry.

12.01.2022 See this guy, hiding at the back, making extra work for us. We carefully time our shiitake fruiting so that we can harvest on the day we send them out to the restaurant. These shiitake are about a day or two away from harvest but that guy, that eager guy at the back, hes ready today. Hes not waiting til harvest day. #fungifarm #mushroomcultivation

11.01.2022 Hello, Im Dave, one of the new faces at Mushroom Forestry. Throughout my 28 year career as a chef I have been passionate about supporting small, local primary producers, and now I am one. Im excited to embark on this new journey with my wife Sam. Together were a dynamite team. She is a horticulturist and I am a chef. Weve both been working locally on the Mornington Peninsula for 10 years and weve now decided to combine our talents and passion to grow fungi together.

We just took part in the Focus on Fungi event held by Jenny of Red Hill Truffles, Danielle of MP Experience and Thoms (head chef) of Maxs Restaurant. Thomas the truffle dog was on his game, and we were lucky to meet the pup in training Maddie. WARNING: Once you have had fresh black truffle with butter, aioli, cream, blue cheese, Brie, cauliflower soup, mushroom toast, macarons and in honey you will be ruined! Those things will never taste the same way again.... I am now rolling home to descend into a food coma, thank you
