15.01.2022 Meet this month’s #MuttiMasters Executive Chef Tom Walton and Head Chef Josh Carrick from the iconic Dolphin Hotel in Sydney. The Dining Room at the Dolphin is a one-hatted restaurant focusing on quality, provenance-driven modern Italo-Australian food. While their wood-fired pizzas are a big hit, their ‘Not Pizza’ menu is full of fresh and inspired takes on classic Italian dishes, like their Herb-Roasted Chicken Cacciatore which uses Mutti Cherry tomatoes in its peperonata with green olives and marjoram. We find that the sweetness of the cherry tomatoes works really well for the peperonata base of the dish. They add great texture and the rounded, rich flavour is perfect.
