25.01.2022 PANCAKE DAY Like I need an excuse! These weren’t today’s pancakes, we were just too busy eating them to take pictures. These are my #glutenfree fluffy buckwheat banana pancakes that are a weekend staple. Today we went for almond meal and buckwheat ones which were delish! I have been pretty quiet lately, well on social anyway but not in life! School holidays were a blast and now kids are of course back at school, and we are in the swing of early mornings, after school... activities and meal planning. I am also heading off to uni next week so we have been a little busy. 23.01.2022 I love this time of year, the smell of ginger and spices, Christmas trees and yummy food. My favourite thing is making gingerbread cookies with my girls. They love it and I love spending time with them in the kitchen baking. When my daughter was diagnosed coeliac I wasnt sure how gluten free gingerbread cookies would turn out, but these ones by @wellnourished are made with almond meal and buckwheat flour and are better than the gluten version if you ask me! 22.01.2022 Letting go Yesterday I dropped my daughter at a birthday party, only the second time we have done this. It occurred to me that whilst letting go as a parent is something we all have to face and its a continuous journey, as a mum of a child with coeliac disease, dropping off at a party where there is all sorts of food, fingers getting into the food and parents that are too busy of course to worry about what my child is eating, is a huge leap of faith! Faith that I have educ...ated her on what she can and cant eat and why, faith that she will actually follow it and make the right choices, and faith that she will be ok! 14.01.2022 We have spent the last week in Hamilton island. Spending days by the pool, water sports on the beach, walks, and lots of delicious food. The island was very impressive with their knowledge of coeliac and cross contamination and we managed to eat out quite a few times. That said we did most of our eating at home in our apartment and so we would make simple things like this green veg pulse pasta meal, that took 10 mins to make and was delicious. 14.01.2022 Coeliac awareness week With it being coeliac awareness week, and all the supermarket shelves being empty in this time of panic, I think its a great time to get back to basics! Veggies, fruit, meats are all gluten free and so much better for us than processed foods anyway! Tonight my little helper and I made a veggie soup with carrot, zucchini, pumpkin, potato, canellini beans, veggie broth and tomato purée. So simple, so delicious ... Did you know that 1 in 70 Australians have coeliac disease but only 20% are actually diagnosed! Symptoms of CD include; fatigue, irritable bowel like symptoms, unexplained fertility issues, osteoporosis, anaemia, other autoimmune diseases (source: coeliac Australia). 10.01.2022 GLUTEN-FREE WRAPS....probably one of the hardest things to find in at the shops that aren't either cardboard-like and therefore don't wrap but just break instead, or if they do wrap they are filled with so many ingredients half of which I don't even recognize! So I have been on a mission to create gluten-free wraps, that taste delicious, are easy to make, actually wrap and have healthy nutritious ingredients....enter my buckwheat coconut wraps! I dont show her face very often but I love this picture of her not only cause she looks so happy but also because she looks so healthy! She was diagnosed at 4 years old (almost 3 years ago now!) and I remember the wave of overwhelm that hit me when we found out. I had lots of amazing people helping me out to navigate the journey but I remember thinking, wouldnt it be great if someone could help me with the r...eally practical things? Like lunchboxes, dinners, what flours to use, what foods heal her gut, what foods would stop her gut healing, how do we deal with birthday parties, what do I look for when buying food at the supermarket, are gf oats ok (they are not!), what questions do I ask when we eat out...and the list went on. 06.01.2022 PESTO The simplest dinner I have ever made and still so full of goodness! I serve it with either pulse pasta or brown rice pasta... Ingredients: - 3 packed cups spinach - 3/4 parsley or basil - 60g Parmesan cheese - 40g olive oil - 1 cup cashews - 3 tbs nutritional yeast - juice of half - 1 tbs water Salt to taste Through all ingredients into a food processor and blitz until desired consistency is reached! Leftover fried rice, cold roasted sweet potato and pumpkin, roasted chickpeas and some sauerkraut. 03.01.2022 UPDATE there has been a lot and also not much going on with my happy coeliac the last few months, hence why I have been so quiet! The growing belly is definitely one thing I have been baking (no I havent eaten too many pancakes) with bub #3 due in September . There has also been home schooling, consulting, home schooling, oh and a new kitten ....and that has certainly consumed all of my energy. I have loved the family time and am so excited and grateful for my growing b...elly. I have definitely found these things to be the silver lining with everything that has been happening in the world. Something else I have noticed is how many people have been using this time to focus on their health and well-being! Amazing! 02.01.2022 The weather has taken a turn towards the cooler side here in Sydney, but I don't mind because it's the perfect weather for my gluten-free Apple and Rhubarb Crumble!
