Especially leftovers the next day SHEPHERDS PIE with sweet potato mash Ingredients: 500g grass fed beef mince... 300g free range lamb mince milk butter 125ml beef stock, 1 large sweet potato 4 large Desiree potatoes 1 large carrot (diced) 2 sticks of celery (diced) 1 brown onion diced 2 garlic cloves 2 sticks celery 6 button mushrooms (sliced) frozen peas (as much as you desire) parsley 4 tablespoons (or more depending on your taste) Worcestershire sauce 2 tablespoons tomato paste 1 teaspoon cornflour extra virgin olive oil chilli flakes Sea salt cracked pepper Grated cheese Method - Pre-heat the oven to 180 degrees. 1. peel and dice the potatoes and sweet potato. Cook until soft and put aside. 2. Cook the onion and garlic until soft and add the beef and mushrooms. Cook until browned. 3. Add the vegetables minus the parsley and peas. Stir through. 4. Add the Worcestershire sauce, stock, tomato paste, chilli flakes, sea salt, cracked pepper, cornflour and stir through. Bring to the boil and reduce to simmer until sauce has thickened and veg are cooked through. 5. Mash the potato and sweet potato adding some butter and milk and sea salt. Set aside. 6. Once the sauce has thickened, add the peas and parsley. Stir through and take off the heat. 7. Add mixture to a casserole dish and layer with the mash and some cheese if you feel like it. 8. Put into pre-heated oven until mash has a slight crust on it. Serve with steamed greens and garnish with parsley. See more
