This is Robert’s 3rd Pandan Apple Crumble during the recent Melbourne lockdown and we thank him for sharing his recipe. Lockdown is almost over and have fun with fishing & dining out. Still, please take care everyone. Let's bake : PANDAN APPLE CRUMBLE Ingredients :- * 150g (1 cup) plain flour ... * 100g (1/2 cup, firmly packed) brown sugar * 2 tspn @my.blue.tea Pandan Powder, * 100g chilled butter, chopped * 60g (1/2 cup) chopped walnuts * 5 large Granny Smith apple * Icing sugar, for dusting * Vanilla ice-cream, to serve METHOD Step 1 Preheat oven to 180C/160C fan-forced. Combine apples, juice, sugar, Pandan Powder and water in small saucepan over low-medium heat. Cook, stirring for 3 minutes or until apple is slightly softened. Step 2 To make the crumble, combine the flour, sugar, oats and butter in a bowl. Use your fingertips to rub the butter into the flour mixture until the mixture resembles breadcrumbs. Step 3 Transfer apples into a 3 cup-capacity ovenproof dish, draining off most of the liquid. Sprinkle crumble mixture over the apples. Bake in oven for 20-25 minutes or until golden. Serve warm with ice-cream or whipped cream. The fragrant & flavour of Pandan and it's sweetness actually married well with granny smith apples. 08.01.2022 Hello everyone, to celebrate this year's Diwali which falls on the 14th Nov 2020, Saturday we are giving you this beautiful PANDAN COCONUT CHUTNEY recipe by ChefDave VeganJourney. This traditional Indian coconut chutney is given a little Pandan twist. So yummy you could eat it on its own. . INGREDIENTS - For the Chutney : * 1 cup Shredded coconut * 2 Green chilies... * 4 Green Cili Padi [bird eyes chili] * 1 tsp @my.blue.tea Pandan Powder * 2 cup Water For Sautéing : * 4 tbsp Cooking oil * 1 tsp Mustard seed * 2 Dried Chili * 1 Shallot * Salt (to taste) * Brown sugar (to taste) . METHOD : 1. Blend all the ingredients for the Chutney until you get a smooth paste-like consistency. 2. Heat the oil in a pan and sauté the rest of the ingredients until fragrant, then add in the blended paste. 3. Adjust the seasoning and it's ready to serve with fresh steamed Idli. . Thanks Chef Dave.
