24.01.2022 Got Fussy Eaters?? I heard about this super easy, ridiculously delicious, nutritious breakfast a few years back and it has always been a winner with my little guy. Breakfast time is often a struggle for families.... What can you give your little people before School, Kindy etc that is nutritious and filling and wont take lots of preparation The below recipe is an absolute winner in my book. THE OAT PANCAKE. Ingredients: 1 Cup of oats ( organic if gluten sensitive ) 2 Free Range Eggs 1 Organic Banana Method: 1. Place the Oats, Eggs and Banana into a blender or you can even mash with a fork. 2.Heat your frying pan on a low heat, add coconut oil, rice bran oil etc 3.Pour the ingredients into the pan, swill around until the pancake spreads, wait for bubbles to form on the top of the pancake, flip over, allow to firm up on both sides and serve. And your desired toppings: Fruit, Organic Honey, Pure Maple Syrup, the choices are endless. THATS IT!!! Served with a green juice your child will head into the day with a great fuel source charging through his or her little body. TIP!! make yourself one too, they are so yummy, I usually end up eating half of my sons before it gets to the table

24.01.2022 Greek Avocado Toast I know what I am having for breakfast tomorrow! :) :) INGREDIENTS... 2 avocados, pits removed 1/2 a lemon kosher salt Freshly ground black pepper pinch of crushed red pepper flakes 4 slices sourdough bread, toasted 1/2 c. crumbled feta 1/2 c. halved cherry tomatoes 1/2 cucumber, chopped 1/2 c. chopped kalamata olives 1/4 c. chopped dill Extra-virgin olive oil, for drizzling (optional) DIRECTIONS Remove avocado halves from skin and place in a medium bowl. Immediately squeeze some lemon juice over the avocado. Season avocado with salt and pepper and mash with a fork. Taste for seasoning, adding more lemon juice if desired. Spread mashed avocado onto toast then top with feta, cherry tomatoes, cucumber, kalamata olives, and dill. Drizzle with olive oil and serve. JOHN KOMAR

20.01.2022 Prosciutto, kale & butter bean stew Very easy, very delicious... Gotta love that!! Enjoy!!... 80g pack prosciutto torn into pieces 2 tbsp olive oil 1 fennel bulb, sliced 2 garlic clove, crushed 1 tsp chilli flakes or fresh chilli to taste 4 thyme sprigs 150ml white wine or chicken stock 2 x 400g cans butter beans 400g can cherry tomatoes 200g sliced kale Method Fry the prosciutto in a dry saucepan over a high heat until crisp, then remove half with a slotted spoon and set aside. Turn the heat down to low, pour in the oil and tip in the fennel with a pinch of salt. Cook for 5 mins until softened, then throw in the garlic, chilli flakes and thyme and cook for a further 2 mins, then pour in the wine or stock and bring to a simmer. Tip both cans of butter beans into the stew, along with their liquid, then add the tomatoes, season well and bring everything to a simmer. Cook, undisturbed, for 5 mins, then stir through the kale. Once wilted, ladle the stew into bowls, removing the thyme sprigs and topping each portion with the remaining prosciutto.

18.01.2022 CHECK OUT THIS SUPER NOURISHING WINTER SOUP SO GOOD!! Slow-cooked barley, ginger and miso soup... INGREDIENTS 2 teaspoons macadamia oil 1 large onion, finely chopped 3 celery sticks, trimmed, diced 2 carrots, peeled, diced 1 tablespoon finely grated fresh ginger 3 garlic cloves, thinly sliced 110g (1/2 cup) pearl barley, rinsed, drained 1 1/2 tablespoon miso paste 400g frozen edamame, thawed, podded 1 bunch broccolini, trimmed, cut into 3cm lengths 1 teaspoon tamari Chopped fresh chives, to serve METHOD Step 1 Heat the oil in a large saucepan over medium heat. Cook the onion, celery and carrot, stirring often, for 6-7 minutes or until softened. Add the ginger and garlic and cook, stirring, for 1 minute or until aromatic. Add the barley and stir to combine. Step 2 Add the miso paste and 1.25L (5 cups) water and bring to the boil. Reduce the heat to low, cover and simmer for 45 minutes. Step 3 Add edamame and broccolini. Simmer, uncovered, for 5 minutes or until the vegetables are just tender. Stir through the tamari and season. Sprinkle with chives to serve.

We feel truly blessed that you have chosen us to assist you with your health and wellness We will be closed from the 20th of December and will reopen on the 7th of January From all of us at the Myddfai Wellness Centre - May your festive season be filled with love and happiness and your 2020 bring you all much joy Love Kerryn, Denise, Araya, Donna and Hannah CHRISTMAS RECIPE INGREDIENTS 1/2 cup coconut sugar 400ml organic coconut milk 400ml organic coconut cream 3 egg yolks, whisked Seeds from 1 vanilla bean A pinch of Himalayan salt 1 cup of pistachios, shelled, toasted and roughly chopped + extra to top 1/2 cup pomegranate seeds + extra to top METHOD 1. Heat sugar, coconut milk & cream, egg yolks & vanilla seeds on low heat, stirring continuously until sugar is dissolved. Remove from heat, allow the mixture to to cool before tipping it into a small non - stick loaf tin & place in freezer 2. After mixture has been in the freezer for 2 hours, stir in the pistachios & pomegranate seeds. Stir the mixture hourly for 3 - 4 hours to prevent crystallisation & for a smooth creamy finish. 3. Take out of the freezer 10 minutes before serving. Scoop into individual serves or tip it all onto a serving board & top with reserved pomegranate seeds and pistachio nuts ( if you are feeling a little naughty, drizzle with pomegranate molasses) ENJOY

10.01.2022 Why Myddfai? Many people ask Kerryn why she named her clinic Myddfai Wellness Centre. Myddfai pronounced Muthy-vey, is a little town in Wales where Kerryn grew up.... The town is the age old home to the Physicians of Myddfai, who were renowned herbalists as far back as the 12th century. People would travel from all over Europe to be healed by these brothers and thus Kerryn felt Myddfai was the perfect name for her naturopathy clinic. Myddfai is not only the home town of and Kerryn Miller and the Phsicians of Myddfai but also Prince Charles and Camilla Parker-Bowls who reside in their estate "Llwnywermod" located 5 minutes-drive from the town of Myddfai. Llwnywermod is Welsh for Wormwood ( some of you may have had wormwood in a herbal medicine prescribed by Kerryn) In fact many towns surrounding and including Mydffai are named after the healing herbs which grow wild in abundance in Myddfai and surrounding areas. Myddfai has a tiny population of 80 and the royal couple are often seen in town. So if you ever visit the UK why not take a trip to Myddfai? Who knows you may have a royal encounter.

06.01.2022 PLASTIC NOT SO FANTASTIC It is wonderful that at long last there is a shift in consciousness about the terrible effects our desire for convenience is having on our planet. Whether you agree with the supermarkets change to reusable bags or not it has definitely sparked the conversation about pollution and this can only be a positive thing.... However there is another side to the debate that many of us are not aware of. Not only is plastic destroying our earth it is also having a detrimental effect on our wellbeing. Plastic - specifically Bisphenol A (BPA) which is used in many products including food containers, plastic bottles, lining in canned foods, infant formula cans, even receipts are coated with BPA for printing purposes all of this is having a hugely negative effect on our hormones. These plastics cause what is known as Endocrine Disruptors. Endocrine Disruptors effect the bodies ability to metabolise Oestrogen well. This means the liver and gut need to work hard to break these toxic oestrogens down, leading to poor oestrogen metabolise and toxic oestrogen overload. These can lead to many side effects - some dangerous. PCOS (Polycystic Ovarian Syndrome) PMS Infertility in woman and men Menopausal complaints Endometriosis Fibroids Weight gain Poor fetal development Poor brain function Heart disease Diabetes Some cancers Other studies have also found that the plastics which are being produced without BPA could be just as detrimental as they still have OAs (Oestrogenic Activity) So BPA free does not necessarily mean OA free. It can be overwhelming to think of the effect plastic can have on us, but with awareness comes change. Start small, remove plastic containers and plastic bottles from your home, replace with glass or steel. Replace glad wrap with paper or beeswax covers or wraps Do not buy prewrapped fruits and vegiesseriously what is that about? Only buy fresh food, nothing out of a tin (if you do buy tinned food, never store it in the tin after opened, as once it is opened the oxygenation sets off the leaching of plastic throughout the food) Make small achievable adjustments and your body and environment will thank you. 05.01.2022 A little bit fiddly, but so very worth it!! YUM! Roasted stuffed cauliflower A VEGAN DELIGHT... Ingredients 1 large or 2 small cauliflowers (about 850g) 5 tbsp olive oil 4 tbsp breadcrumbs (Gluten free if needed) For the stuffing 250g kale chopped 1 tbsp milled linseed 1 onion chopped 2 garlic cloves, chopped small pack sage leaves chopped small pack rosemary leaves chopped 150g cooked chestnut finely chopped, plus 30g for the topping 2 lemons zested good grating nutmeg Method Trim and discard the cauliflower leaves. Turn the cauliflower upside-down on a chopping board and use your knife to carefully cut out the stalk and core, leaving a cavity the florets should still be holding together. Bring a large pan of salted water to the boil. Submerge the cauliflower and cook for 7 mins, then remove with two slotted spoons and set aside to steam dry. Add the kale to the pan and cook for a min or so until wilted. Drain, then run under cold water to cool. Squeeze out the excess liquid and roughly chop. To make a linseed egg (this will bind the stuffing together), mix the ground linseed with 3 tbsp water and set aside for 5-10 mins until gluey. Meanwhile, heat 2 tbsp oil in a frying pan, add the onion and a pinch of salt, and cook until softened, then stir in the remaining stuffing ingredients, including the kale, and cook for a min or so more. Remove from the heat and season, then put in a blender with 150ml water and the linseed egg and blitz to a thick pure. Transfer to a piping bag. Pipe the stuffing mixture into every nook and cranny of the cauliflower, getting in as much of the pure as you can see our tip below. Transfer to a baking tray lined with parchment. Can be made up to this point in the morning and kept in the fridge. Heat oven to 200C/180C fan/gas 6. Mix the remaining chestnuts with the breadcrumbs and some seasoning. Spoon the remaining oil all over the cauliflower, then pat on the breadcrumb chestnut mix. Roast for 45 mins until golden brown and tender (place under a hot grill for the last part of cooking time if it needs to crisp-up). Serve with any crisp bits that have fallen onto the baking tray.

04.01.2022 SPRING TIME Lemon and honey chicken salad INGREDIENTS... Zest and juice of 1 lemon, (plus 1 tablespoon lemon juice, extra) 2 tablespoons honey 1/4 cup (60ml) extra virgin olive oil 1 cup mint leaves, half the leaves finely chopped 4 x 200g chicken breast fillets, each sliced into thirds 200g podded (from 1kg unpodded) fresh or frozen broad beans 1/2 (200g) garlic sour dough loaf (torn) Large handful of baby spinach 400g can chickpeas, rinsed, drained 125g cherry tomatoes, halved 1/2 cucumber, finely chopped 1/4 cup flat-leaf parsley leaves, chopped 2 teaspoons wholegrain mustard METHOD Step 1 Preheat grill to medium-high. Step 2 Combine lemon zest and juice, honey, 1 1/2 tablespoons oil and chopped mint in a large bowl. Season with sea salt and freshly ground black pepper. Add chicken, stir to coat, then place in the refrigerator for 10 minutes to marinate. Step 3 Meanwhile, blanch broad beans in boiling water for 1-2 minutes. Drain and refresh under cold running water. Remove tough outer skins. Set aside. Step 4 Place sour dough on a baking tray and grill for 4-5 minutes until golden and crisp. Step 5 Preheat a chargrill pan to high. Cook chicken for 2-3 minutes each side until caramelised and cooked through. Step 6 Toss broad beans, ciabatta, baby spinach, chickpeas, tomatoes, cucumber, parsley and whole mint leaves in a large bowl. (Recipe sourced from taste.com.au)

04.01.2022 OMG these sound devine INGREDIENTS Base layer... 1/2 cup macadamias 6 medjool dates, pitted 1/4 cup desiccated cocon Caramel Layer 1/2 cup macadamias 7 medjool dates, pitted 1/3 cup pure maple syrup or rice malt syrup 1 teaspoon vanilla extract Pinch of sea salt Chocolate Layer 1/3 cup coconut oil 2 tablespoons pure maple syrup or rice malt syrup 1/3 cup raw cacao powder INSTRUCTIONS To make the base layer, add the ingredients to a high speed blender or food processor and blend until it resembles fine crumbs and sticks together when pressed. Spoon mixture into a 24 mini muffin pan (see note below) and press down with the back of a teaspoon. Place it in the freezer. To make the caramel layer, add the ingredients to a high speed blender and process until completely combined and smooth. Spoon the mixture onto the bases and smooth over with the back of a teaspoon (see note below) and place back into the freezer for at least 1 hour to set. To make the chocolate layer, melt the coconut oil in saucepan on low heat. Once melted, remove from heat and add the sweetener. Whisk briskly until well combined. Then add the cacao powder, stirring until well mixed through. Pour the chocolate on top of the caramel layer and place back into the freezer and let it set completely, approximately 3-4 hours. Once frozen, they are much easier to remove. I keep mine store in the freezer in an air tight container and remove them a few minutes before serving/eating. NOTES I recommend using either a mini silicon muffin tray or cut out little strips of baking paper to use as tabs at the bottom of the regular mini muffin tray, to make it easier to remove them from the muffin tray. Cook time does not include the time it takes for the raw caramel slice bites to freeze approximately 3-4 hours, depending on the temperature of your freezer.
