Gendarme (smoked air cured saucisse), presskopf head cheese (head pig jelly terrine), mettwurst (spread saucisse slightly smoked), blood sausage, galantine, pork rillette, cervelas, pork and fat bacon campagne terrine, pate en croute. 22.01.2022 One of the highlights of our Dordogne trip, the 12th century Moulin de Trell visit. Situated at Vezac close to the famous Chateau de Beynac, the mill was restaured 4 years ago and produce amazing hazelnut or walnut oils. Use raw it is delightful.

19.01.2022 Did you know that grapes can be used in severals cooking recipes? Here is my vendangeur stuffed quail preparation. Stuffing is made with duck liver, pork fat, shallots, fresh herbs and a spalsh of Cognac. Then wrap in a thin slice of bacon and roasted for 20 to 25 minutes. Remove the grapes from the vine and roll them in a pan with a nut of butter. Et voila!

12.01.2022 Sometimes you have to stop and give way to the sheeps . We met these sheeps during our Basque Country tour and their milk is used to make the famous Ossau Iraty cheese. 02.01.2022 Rule number one: the product. Why rush to the supermarket with a shopping list when local farmer markets offer you everything you need. Fresh, seasonal and locally produced amazing food is waiting for you. It is only when returning home that you have to think about how you will have to prepare these eggplants or strawberries. Sometimes a minimum amount of cooking is required, sometimes the help of a chef can be a good idea.
