22.01.2022 BREAKFAST I don’t know about you but breakfast is NOT my most favourite meal of the day (unless someone else cooks it for me ). So to prevent eating unbalanced meals or simply skipping breakfast (yes I have done this - more than once) I will whip up enough of these super tasty and healthy wraps for at least 4 mornings in a row. With 2 servings of vegetables, healthy fats/proteins and Omega 3’s these grab and go breakfasts will see you start your day feeling fab! ... Ingredients: ~ 4 large wraps of your choice ~ 1/2 baked sweet potato* ~ 1 avocado sliced ~ 2 eggs ~ 1 cup mushrooms sliced and sautéed ~ 200g smoked salmon ~ Handful spinach Method: Wrap sweet potato in some baking paper and bake in the oven until soft and then when cold spread over wrap. Fry mushrooms and eggs and then simply assemble and roll. 06.01.2022 Absolutely loving the veggies coming out of the garden this year (although the cabbage took so long to grow, I picked it out of season ). Cabbage is high in Vitamin K, which is great for bone health and Vitamin C which stimulates the immune system. Plus, all that gardening will give you a nice dose of Vitamin D (but be sun smart)... Cabbage recipes to come... xxx
