25.01.2022 You know how some people like to hide from their birthday? Well, we were going to but then we decided to share it with you instead. My Provincial Kitchen is officially 2. 23.01.2022 Lupins have been registered as an allergen since 2018 It is an allergy of its own, but with lupins being a legume similar to peanuts, it is generally said that if you are allergic to peanuts you COULD be allergic to lupins With that being said though you dont have to be allergic to peanuts to be allergic to lupins, it is an allergen all of its own... 20.01.2022 Have you ever heard of lupin before? It is a legume that has traditionally been grown for stock feed, but we see the benefits that it can bring to us as humans to consume it directly in our diets Lupin in a naturally gluten free legume. It is best suited to the sandier soils & a Mediterranean climate, (which is perfect for where we farm).... It is jam packed with nutrition, starting off with 37% protein, 42% fibre with only 6% carbs. 20.01.2022 Is your pantry filled with products that makes your insides smile? For myself its been a transition that went from one extreme to the next. If you walked into my pantry youd probably be filled with delight I try any foods that are dairy free, gluten free & with as little to none preservative/additive free where I can. Now that cant always be easy or achievable... With base ingredients I try to buy in bulk so it works out cheaper & some products I like I cant buy locally so I source from online. Some of my go to bulk buys are almond meal, maple syrup, cocoa, rapadura sugar, bone broth powder, nuts & seeds, salt & oil In doing this I have been able to really figure out which foods works as medicine for my body. 19.01.2022 This one might be a bit controversial, but I'm going to go there anyway! I'm not a fruit cake fan, well I sort of am, but only a certain type of fruit cake & I will only eat about 1 piece a month, so it would last FOREVER! So my thought was, what could I use as an alterative to a Christmas fruit cake? ... When we did this photoshoot, it just so happened that we sprinkled a little too much powdered sugar over the cake & I had accidently topped it with slivered almonds. The images came out perfect & with the raspberries & leaves it has a real Christmassy feeling. So, I introduce to you The Raspberry White Choc Christmas Cake! Tada, all your Christmas cake problems solved! No, in all seriousness, this works so well for a Christmas cake & it is a real winner on the tastebuds. You can bake it in advance & pop it in the freezer, to pull out for gifting. It defrosts like a trooper, (you wouldn't even know it was frozen) Anyway, forget my gourmandization, what type of Christmas cake do you like to eat (if you like it that is)

18.01.2022 Do you use dairy in your cooking? Most of the recipes I share with you are both gluten and dairy free. This is because it is how I eat but what about you? Removing dairy from recipes creates yet another level of working out. Butter has 80% fat & 20% water in it, so replacing butter with oil, doesnt always work out 1 for 1. Then theres cows milk compared to plant milk, they have different levels of fat... Do you use dairy products or do you go for plant based products instead? See more



18.01.2022 We met these guys at the Melbourne Free From Expo and purchased afterwards Our daughter hasnt been a huge fan of gluten free treats and lunches... until now! Just arrived home from work to her asking to make the savoury muffins for her kinder lunch tomorrow. The brownies have been a huge hit as well ... We have found that they are all so versatile, easy and taste simply amazing Just wanted to say thank you for making our two Coeliacs lives a little bit easier! See more

17.01.2022 Hi, Im Tanya, also known as The Cook, Mum, Wife, Book keeper, Daughter, Sister, Friend & many more titles But do you know much about me? Im not sure, so Im here today to share some things about me, the person behind the brand of My Provincial Kitchen 1. I love to cook (my Mum & Nannas all taught me how to cook & Ive been doing it for a while now)... 2. I love to travel. The first time I went on a plane was just before my 21st birthday. I used to struggle with the actual flight, but Ive worked through that & now dont mind at all being on a plane & ABSOLUTELY LOVE going to new (or old) places. 3. I love wearing long sleeved linen shirts . Theyre my favourite go to (& I struggle with un-natural materials on my skin). And long sleeves to protect me from the sun 4. I love talking to people about lupins & about life in general. I love exploring the differences in people & opening my mind to different situations or opportunities 5. I enjoy public speaking (as long as I know what Im talking about). Something I want to do more of, is speak to rural women to share my experiences & share with them how I see life & open their minds to life being a little different to how they may see it 7. My favourite vegetable is broccoli 8. I love it when I get out of my own head & go outside & play in the dirt.......& I love that I can drive a couple of our smaller tractors & the bobcat to make the job easier 9. I think Im too serious, I struggle to switch off. My friends tell me Im funny & light, but by golly it takes a bit to get there sometimes 10. Family & food, are high on my priority list! So, thats me in a nutshell. 15.01.2022 Minimal starch, what does that mean in the world of food, cooking & gluten free? Starch is high on the ingredients list of gluten free food. And it is not necessarily all that "healthy" for us to consume too much. Starch converts into glucose for energy. But when the foods you buy have only starchy ingredients it can start to cause some issues in the workings of our bodies. ... This is one of lupins beautiful things. There is minimal starch, meaning that it doesn't add to the load of other gluten free starchy ingredients. BUT There is a negative element to the lack of starch, and that comes in the form of cooking. In cooking, starch acts as a thickener or stabiliser through gelatinisation. So, wholemeal lupin flour can't be used as a plain flour, it is too heavy & has almost no starch, you need to add other starches/flours to it to get it to 'act' as plain flour. This is why the creation of the Self Raising Lupin Flour happened, to make it easy to be able to use lupin without calculation or having to work out what other flours/starches to add to get it to work. Lupin does thicken sauces ok, the flaked lupins are the best for this & they add a little texture to the sauce as well. The flaked lupins won't go 'gloopy' as flour often can. In saying this, you certainly can add lupin flour to any sauces, I definitely do & love the complexity it brings to the flavour.

13.01.2022 SAVE THIS VIDEO FOR EASY ACCESS Today I have a really easy, delicious fruit crumble recipe that you will want to make over & over again. It is such a winner, all you need is Stewed fruit (or tinned fruit works too) 1 pack of Lupin Anzac biscuit mix... 60g rice malt syrup (or honey, golden syrup or maple syrup) 40g coconut oil (or butter or light flavoured oil) 20g water Pop fruit into an oven proof conatiner Follow directions on the Anzac pack mix to combine & spread over the top of fruit Bake in oven until golden brown What fruit would you make into a crumble.? 12.01.2022 Donuts are so good, but the deep frying isnt really to best for us. I love being able to use our mixes for different things & found the Raspberry White Choc Loaf works an absolute treat as baked donuts YOU WILL NEED 1 packet Raspberry White Choc Loaf 2 eggs... 120ml milk (either dairy or dairy free) 100m light flavoured oil (or 125g melted butter) WHIP IT UP Preheat oven to 180C Prepare a donut pan by greasing it or spraying with a cooking oil Beat your eggs, add milk and oil Mix well Add Raspberry loaf & mix everything together well ensure you pick up all those dry bits on the bottom of the bowl Spoon mixture into prepare pan, fill approx 2/3 of the way up the pan Bake in the oven for 15-20 minutes until a skewer comes out clean once inserted Allow to cool properly before removing from donut pans Once cooled you can add a glaze or some melted chocolate & sprinkles Id love to know if youve given these a try, let me know in the comments below

11.01.2022 A trip down memory lane I remember taking this picture & being so proud of what we had created. A few years in the making & we finally arrived at this point. Finally, retail packages of our first two products The journey has been a long one. Its funny how people see you create a product or start a business & in a couple of years you are going well & you are considered an overnight success. The work that goes on behind the scenes befo...re you launch is huge There has been other people start lupin flour businesses over the years & they seem to have fallen by the wayside. We saw this & wondered how we could do things differently so we could grow & stay strong This is where we decided to take our lupin flour that next step in creating mixes. The Self Raising flour being the first one Lupin flour can be difficult to use by itself if you havent had experience with it. We live in a era where time is precious & people have so much on, that there isnt always enough time to do the research or exploration on how to use a new product We have loved every moment of the journey so far. 10.01.2022 How good does this carrot cake look? So good right?! I just love it when I find a recipe that my family enjoys & this is definitely one of them. In this cake I use our self raising lupin flour as an easy swap for wheat self raising flour. When using lupin flour you will need to adjust your liquid ratio because lupin absorbs alot of liquid (not as much as coconut, but nearly)... 04.01.2022 Have you ever wondered what lupin flour tastes like? The best way we feel to describe it is that it has a slightly nutty flavour (when cooked). Now when youre mixing it with wet ingredients, thats a whole different ball game Sometimes when mixing a batter that has lupin flour in it, it can smell weird or almost rancid. That is perfectly normal, it is a characteristic of the flour itself & I guarantee you that it cooks out. 02.01.2022 In celebration for International Men's Day I want to shed a little light on these 2 incredible men in our business/es Tom, our son. He is nearly 17 & growing into such a wonderful young man. We are so proud of the way he is learning all things farming (plus a bit more). Every chance he gets he's outside doing something or other. Whether it be planning on cleaning up the workshop, tinkering with an old Holden Ute we have, or exploring something that peaks his interest (mum... generally cringes when she hears about these things) It can be hard with the kids, working out if they want to come back into the business, or fly free & try their own things. We feel very blessed to have a son (& daughter) who is interested in Agriculture. The future of growing food really does rest on their shoulders. There are big boots to fill, but they have the ability to succeed Robert, well where would we be without him? I don't really like to think about that. He is such a rock in our family & business. His blood runs thick with farming, growing food, innovation & creation. The hours he works when the job is on amaze me. 20 odd years on the farm & I still find it intriguing how he pushes through. His willpower, tenacity & ability to keep going when his work hours are around 18 per day for days & days & days on end. During seeding he is up first & generally to bed last EVERY.SINGLE.DAY for about 6 weeks (and it doesn't end there) There is so much to celebrate about our men. They're powerhouses & an integral part of bringing balance to life. This also links into the wonderful initiative we support called #6B's. A movement giving men a space to open up & chat or share their feelings, thoughts, or just spend a bit of time with a fellow 'bloke' Thank you to these 2 men, along with the other men that have made it possible for us to be where we are, previous generations, Robert's dad & grandfather & previous men who have worked hard to forge the way so we can be here. THANK YOU!

02.01.2022 CHRISTMAS COUNTDOWN - YES it's 4 weeks until the BIG day! Harvest will lead us right up until Christmas here. We generally get finished before the big day, but it can cut a little close at times Because the lead up to Christmas is busy, we are the type of people that really take it easy. With the pressure of harvest, we don't ever put any expectations on ourselves or others during this time... Now this may sound boring & honestly I do feel we are a bit boring at times, but hey you've got to do what works for you! And sleep-ins, opening presents, breakfast in front of tv, a relaxed lunch, an afternoon swim & then climb into bed is about it for us. Which in all honesty sounds like heaven to me We like to stay out the farm, because of the risk of fires & alot of our neighbours go away over Christmas. So we are happy to hang around to keep an eye out for the odd puff of smoke Breakfast for us this year will probably consist of pancakes & bacon (I'm trying to think of something a little different I could whip up to just switch it up a little, I'll keep you posted on that one) Lunch is generally cold meat & salad (the kids help with this & actually put the majority of it together!) Dinner is always left overs, as is the food for the next few days! So what are you plans for Christmas, do you do it big, or keep it low key? Hot or cold lunch? Family or friends?
