22.01.2022 Honey Lavender Panna Cotta 1/2 0.25-ounce package of powdered gelatine, about 1 1/2 teaspoons 2 tablespoons cold water 1 cup half and half or cream 1/4 cup wildflower honey... 1 teaspoon dried lavender 1 cup milk Strawberries or other berries, to serve In a small bowl sprinkle the gelatine over the 2 tablespoons of water and let soften for at least 5 minutes. Lightly oil 4 5-ounce ramekins with baking spray or flavourless oil. Set aside. In a small sauce pan heat the cream, honey, and dried lavender to a light simmer then turn off the heat. Whisk to incorporate all the honey evenly, then strain into a mixing bowl. Whisk in the gelatine. Whisk for at least a minute to make sure it is evenly distributed and that no lumps remain. Whisk in the milk. Pour into the ramekins, and put in the fridge to set. The panna cotta will need at least 2 hours to set; we prefer to wait at least 4, especially if the puddings will be unmolded. To unmold lightly run a knife around the edge of the chilled pudding and invert onto a chilled plate. Garnish with sliced strawberries. Serves four. See more

03.01.2022 Lavender-Cheesecake Brownies Makes 16 generous squares to share. 6 TBSP (3 oz. /85gr) unsalted butter 4 ounces (115 grams) bittersweet chocolate, chopped 2/3 cup (130 gr) sugar... 2 TBSP dried Lavender flowers 2 large eggs, room temperature cup (70 gr) plain flour 1 TBSP (8 gr) cocoa powder 1 tsp vanilla extract cup (80 gr) chocolate chips Top Layer 8 ounces (250 gr block) cream cheese 1 large egg yolk only 5 TBSP (75 gr) sugar Touch of vanilla extract 1 TBSP flour 1 TBSP dried Lavender Preheat oven to 350 F/175C Line an 8 inch (20cm) square pan with 2 strips of silver paper/ parchment at right angles, with over hanging tabs. Butter and flour top paper layer. In a medium pot; melt butter, then add roughly chopped chocolate and Lavender barely melting together over low heat. Remove from heat; stir in sugar, then eggs. Next in the flour and cocoa powder. (*Important: mix smoothly for one full minute.) Then stir in vanilla and chocolate chips. Scrape batter into prepared pan, spread evenly. Top layer: In a medium bowl or food processor beat together; cream cheese, egg yolk, flour, sugar and vanilla. Add most of the last TBSP of dried Lavender, saving a few pinches to sprinkle on the final top. Gently pour cream cheese, mix smoothly over uncooked choc batter layer. Sprinkle with remainder of Lavender flowers. Bake 35 minutes- 40 min max: middle will just be set, top still looks glossy. Cool completely, or chill in fridge, before lifting back tabs to cut into squares. See more
