24.01.2022 Our next tea tasting is on the Sun 22nd Jan. We'll be trying some white and green teas and some top quality rock teas including Horsemeat. 20.01.2022 Tea of the day...2013 Old Tree Red. A powerful, full-bodied red tea from Yunnan. It has a hint of sweet potato and creates plenty of warmth in the body. It is fantastic for protecting and settling the stomach and calming the appetite. Mixed here with a little snow chrysanthemum from Xinjiang (Kunlun mountain) to create extra sweetness. This particular sample was growing wild, above the 3000m snow-line. Wild snow chrysanthemum is hard to find and most is now grown on plantations. Feeling contented :-)

18.01.2022 We are planning a tea tasting at a newly opened Chinese porcelain shop in Chatswood which sells a range of vases, furniture and some teaware. The tasting will be on a Sunday from 3-5.30pm (ish :-) ) and we have space for 6-8 people. The cost is $55 per person. 06.01.2022 It's a wonderful day Saturday afternoon. We are having a Taiwanese Dong Ding oolong tea now. It's got distinct Taiwanese flavour, sweet and bitterness a bit like raw pu-erh...

05.01.2022 A quick Lady Lapsan to end the day. A non-smokey Lapsang Souchong...soft, malty red tea; it has very fine leaves so best brewed at around 80 degrees.

05.01.2022 Tasting some 2014 Golden Peony which has been compressed into a disc. Smooth, rich and sweet. Will put the rest aside for more ageing and test again next year (if we can resist that long) :-)

04.01.2022 It's always a good time for Moonlight White, a compressed tea made with leaves from Yunnan. The leaves are picked and dried under moonlight and then the tea is made using the Fujian white tea process. It has a warm, mellow, rounded flavour and creates a sense of balance and harmony in mind and body.
