25.01.2022 Wholegrain week What is the Ayurvedic view on wholegrains? Wholefoods are sattvic in nature, meaning it brings balance and harmony ... Grains are grounding, nourishing and delicious. It supports digestion by activating important enzymes and providing fiber. And because it has the sweet taste, we are more satiated and less likely to look to sugary foods. Then why is it that when people feel good when they give up grain? Many people who have given up grain find that digestive upsets go away and feel much better. There are two reasons for this. According to Ayurveda, most food intolerances can be traced back to the health of the internal digestive fire or Agni So: A) if agni is weak, it is difficult to digest heavy foods like grain, so eliminating this food makes it appear as if the problem has been solved. But since grains contain enzymes that support digestion (especially of proteins), agni is actually weakened by giving up grain. This leads to more systemic issues. B) Many people benefit greatly after going grain free because they have often given up the processed foods that contain grain. Anything processed or precooked lacks prana and is difficult to digest. Looking at foods in isolation causes a lack in understanding that nature, and our bodies and mind, operate holistically. When you isolate a single component in a food, such as the gluten in wheat or sodium in salt, you miss the big picture about how the many components in a food work together. Without a holistic perspective on food intolerance, the easiest option is to blame the food instead of getting to the root of the issue What do you think of Wholegrains? Id dread office lunches and after work catch meet ups and would always eat before so I wouldnt be hungry. ... Finding veg options was a challenge let alone something that was healthy & vegan & delicious So glad we are actually the go to restaurant that does catering for most dietary requirements Organisations are now realising the way to your employees heart is also through the stomach It shows that you care about them and their needs. You care enough to not just order a standard sandwich platter but actually something delicious and healthy that they will keep talking about for days. 21.01.2022 Changing things up I recently read a beautiful post by @bondimeditation explaining the importance of change in our evolution. As someone that revels in the novelty of the new, I thrive on change. ... No wonder I like to change menu or the wall color of Nalinis every 3-4 months Motherhood has been a welcome change but the juggling of 2 businesses @nalinisayurvedickitchen and @chachasvegangelato a challenge nonetheless. So Im going to be moving Bondi in a couple of weeks to be closer to the shops. Youll be seeing me around a lot more often most likely with my cute little Joey Prana in my sling In addition to being close to water, Im most looking forward to morning strolls along the beach, weekly chai fix from the chai tent @bondifarmersmarket and yoga at my favourite studios Ive always wanted to do and to eat own food and ice creams of course But more importantly I cant wait to see you all in person now! 21.01.2022 One of the things were so grateful for at Nalinis is the opportunity to meet people and the unexpected friendships we have with customers and staff. One of them being with our staff member @varsha.murthy Swipe ... Some of you may remember the insanely capable Varsha from our Bondi Junction days. Up for any challenge and never afraid to roll her sleeves up and help out, Varsha was one of a kind. Skipping lunch breaks because we had a rush hour, staying back late because there were things to do was always something shed do willingly and without us ever having to ask. Yesterday I had the pleasure of having @varsha.murthy over for lunch at my home and made this plant based mushroom kofta curry with stuffed mushrooms It paired perfectly with the utterly flavoursome peas and potato Pulau that Varsha brought with her Varsha one day dreams of opening her own food business and I honestly cant wait for that day to come! The world awaits your greatness whatever you choose to do @varsha.murthy So lucky to have met you and so lucky to have our existing staff who will no doubt go on to be our best friends in the future @ Nalinis HQ

17.01.2022 Charred Okra with onions and macadamia dukkah Okra is an underrated vegetable mostly because most people dont know how to cook with it. Add it to the sliminess when cooked is definitely not appealing ... Charring the okra makes sure its cooked but still crunchy and the macadamia dukkah adds the perfect oomph. 16.01.2022 #wholesomewednesday #wellnesswednesdays Warming bowl of Kitchari Why does Ayurveda recommend kitchari for cleansing? ... Cleansing in Ayurveda is all about maximum detoxification with minimum depletion. A mono diet of Kitchari is a simple and easy to digest food that is nourishing to your body while you cleanse. The recipe is simple with just Rice and mung beans. This combination of rice and mung bean which are both easy to digest is high in fibre placing the least strain on the digestive system whilst still helping the body to get rid of accumulated toxins. If youd like to try Kitchari cleanse this spring, heres a simple recipe: 1 cup basmati roce 1/2 cup Mung beans 4 cups water Salt to taste Herbs and Spices: My favourite spices to add to Kitchari are: Fresh Ginger (1/2 teaspoon) Cumin seeds (1/4 teaspoon) Fresh coriander (1 teaspoon - I loovvveee fresh coriander but if youre someone that feels like eating soap when coriander , you can leave it out) Fat/oil: Ghee is the most common and recommended fat for Kitchari due to its unique Ayurvedic properties. If youre plant based or lactose intolerant, coconut oil can be substituted. Method: Soak mung beans in water for a few hours. In a pot add coconut oil/ghee and cook the fresh ginger. Add rice and mung beans with 4 cups of water and simmer the pot while the Kitchari comes to a boil and grains cook through. Add salt to taste. Garnish with fresh coriander PS: DO NOT CLEANSE IF YOURE: Pregnant Breastfeeding as toxins can get transferred to the baby through breastmilk. Job satisfaction in your late 20s and 30s has a link to overall health in your early 40s, according to a new nationwide study. While job satisfaction had some impact on physical health, its effect was particularly strong for mental health, researchers found.... Those less than happy with their work early in their careers said they were more depressed and worried and had more trouble sleeping. And the direction of your job satisfaction whether it is getting better or worse in your early career has an influence on your later health, the study showed. I can definitely relate to this. Prior to starting Nalinis, I worked as a financial advisor and was miserable both physically and mentally. Whilst running a hospitality business is no walk in the park, I can truly say Im so much more satisfied with my work and (most days! ) I wake up feeling energised and excited. Ayurveda recognises Dharma as one of lifes 4 major goals (others being Artha (acquiring wealth), Kama (satisfaction of desires) and Moksha (liberation)) As @mariekondo would say, asking Does this spark joy is something I do repeatedly to the work/relationships/experiences (not just the things I own) as I find it is a good way of checking in with myself to see if Im in alignment with my purpose, my dharma. 13.01.2022 Chickpea and sweet potato curry Our chickpeas are soaked overnight and then slow cooked with fresh spices to help you digest all the protein goodness. According to Ayurveda inability to digest certain food groups is a reflection of a weakened digestion aka Agni/gut.... So rather than eliminating food groups all together, the solution is to work on strengthening the Agni or the digestive fire aka the gut. Our philosophy at Nalinis is simple: Eat wholesome Eat local Eat fresh and most importantly, Eat tasty All heathy healthy eating goes out of the window if you don’t enjoy what you’re eating. 10.01.2022 What is a dosa is a question we get asked all the time. Dosa is a savoury crepe made from fermented roce and fermented lentils and some fenugreek seeds. The three ingredients are soaked in water overnight, washed the next day and then ground in a stone grinder - first individually (which takes about 4 hours each) and then ground together so its mixed through welL... Then....we let the batter ferment. NO YEAST, NO SHORTCUTS It naturally ferments which takes anywhere from 24-48 or sometimes 72 hours! What you then get is this fluffy, slightly sour smelling batter as mama is holding proudly and then spread on a cast iron pan to make a crepe. PHEW! The natural fermentation produces the most delicious, light and sometimes crispy crepe/flat bread that most people are often surprised that its actually gluten free! Its a real labour of love In our cooking workshops weve taught making with quinoa flour, sorghum flour, rye flour & amaranth four. All so different with different recipes but just so delicious! 09.01.2022 Do you have someone else more experienced in the business? was the question almost every agent would ask me when I was looking for potential space for Nalinis 5 years ago. At 27, Id just quit my corporate job to start Nalinis with no prior business experience or cooking experience. Heck, neither mum or I had even worked in a restaurant and knew nothing about running a restaurant business. It was a STEEP learning curve and we put a hella lot of blood, sweat and tears ...into it. Luckily I had mumma to see through what wed committed ourselves to. Need to put in a 12 hour day? no worries, shell put in 17 without complaining. Couldnt imagine doing life without her! 08.01.2022 #wholesomewednesday Did you know that inability to digest beans and legumes properly according to Ayurveda is due to not having a strong digestion - or Agni. So it is important to address the root cause of the problem. However these steps help in making digesting lentils and beans easier:... 1. Soak them before cooking or even better overnight: The irritant properties of most beans, like soy or kidney beans, can be reduced by soaking them and then parboiling them (by boiling them and throwing away the water) 2. Cook them with spices: Spices are helpful antidotes. Cooking them with onions, cumin, cayenne and asafoetida make them easier to digest. PS: Last week we covered spices good for helping with digestion. You can refer to that post for a more detailed explanation on spices and how they assist with digestion :) 3. Introduce them slowly - below is the order based on the ease of digesting: 1. Mung is the most widely used of beans in Ayurvedic cooknig and treatment and is considered easiest to digest. 2. Red lentils 3. Brown lentils 4. Green lentils 5. Chana dal 6. Red kidney beans, broad beans, Aduki beans, Fava beans (all harder to digest) 4. Sprouting them: Sprouting lentils and beans increases their bio availability and infuses life (Prana) back into them making them more digestible. 5. Were kicking off a new series called Wholesome Wednesday Each week well post practical tips for a calmer, more radiant life integrating the best of ancient wisdom and modern science and applying it to our modern lives with the power of our intuition. Morning routines are all the rage when you talk about productivity. Were always on the hunt to find different ways to hack our bodies to make us feel more powerful, stronger, clear, energetic etc.... Ayurveda has in essence been teaching us bio hacking for over 5000 years By following a specific routine each morning (called dinacharya), Ayurveda teaches us the key to balance and bliss - by enjoying the present moment and following the lead of nature. By performing these steps, not only are we cleansing and purifying the body but also our mind, thereby setting us up for a much calmer and radiant day ahead And we all know calm = super power! During this crazy time where everything seems out of control and anxiety levels rising, I have been trying follow this routine diligently and it has been such a saving grace I highly encourage you to include at least a few of these steps if not all of them and youll notice a massive difference for yourself - not just a productive morning!
