02.01.2022 Orange and Poppy Seed muffins of course with Grandmas Secret Spice are a family favourite in my house! 125gm Butter at room temperature 2 Eggs 3/4 cup caster sugar... 2 tsp vanilla extract 1/4 cup milk 1/4 cup orange juice 2 level tsp of Flavourista Grandmas Secret Spice Blend (shhh its a secret) 2 cups SR Flour 3 tbsp poppy seeds Zest from 2 oranges Syrup 3/4 cup Orange Juice 1/2 cup caster sugar Pre heat oven to 160 C Cream the butter and sugar, add eggs one at a time. Add vanilla, milk, Grandma's secret spice and orange juice. Dont worry if it looks split it will come together in next step. Fold in flour, poppy seeds and zest, Divide into 12 greased muffin cups (if you dont use a muffin case the syrup will run away) and cook 20 - 25 minutes. Heat orange juice and sugar over medium heat until sugar is dissolved, bring to boil and turn off. Remove from oven and with a chopstick or similar poke 6-8 holes in each muffin. Pour syrup over muffins until all used up. Store in an airtight container for 3-4 days or wrap individually and freeze.. LOL mine never make it past day 2!
