15.01.2022 With fresh fish coming in today how about trying these FISH TACOS @jessica_lowe_coaching _________________________________ Ingredients: Serves 4 500 grams of firm white fish (cod, red snapper, dhufish, shark)... 1 packet of La Tortilleria Corn Tortillas 1 large egg 1/8 a cup of almond milk 1/2 cup of lupin flakes Tablespoon of lemon pepper seasoning Teaspoon of dried dill Pinch of ground pink sea salt 3 tablespoons of olive oil 1/4 a purple cabbage 8 teaspoons of sauerkraut 2 jalapenos 2 limes 1 plain yopro 1 bunch of coriander Method: 1.Chop the fish into bite size chunks. 2.Using a whisk, mix up the egg and almond milk. 3.Put the lupin flakes into a bowl with the lemon pepper seasoining mix, dried dill and salt and stir well. 4.Then dunk the fish bites into the wet mixture and then into the dry mix to coat them. Lay them out separate on a dry chopping board so they do not stick together. 5.Get a non-stick pan hot and add the olive oil - drop to a medium heat and fry off the fish chunks. This will take about 8-12 minutes depending on pan size etc. If you need to do it in two batches, then place the first batch on paper towel and cover with another paper towel - so they stay crunchy. 6.While the fish cooks, prep the vegetables etc - by shredding the cabbage, cutting jalapenos into chunks and limes into wedges. 7.Once the fish is cooked this is when you can assemble your tacos or make it a fun family affair and let everyone make their own. Heat the taco tortillas before adding the filling.
